Christmas crack

I just finished making a batch except with ruffles plain chips instead of saltines. My sister made it like this last year since she’s gluten free and it was the first time I tried it and loved it. It’s cooling now. Can’t wait to dig in.
 
Well I just might have to give it a try. I love toffee. I might have to buy new saltines though. The ones I have aren’t very good.
I made it today. Be aware that it’s very rich. That might be okay for you, but my husband and I probably won’t return to it after having had a few bites. I wish I had quartered the recipe. Lol. My 3 year old loves it, though!

What did you use for the butter and chocolate? I'm always looking for easy vegan stuff for the odd occasion that I need to accommodate a dietary need. TIA :wave2:
 

How can I tell which ones of these are dairy-free? And I'm presuming vegan margarine would work OK?
You have to read the ingredients. The darker the chocolate, the more likely it’s dairy-free. I think Earth Balance would technically be considered a vegan margarine. For this recipe, I think any kind would do but I’ve had some margarines not work for baking. Earth Balance has never given me any problems so I’ve used that exclusively for many years now. IIRC, most margarine contained some form of dairy (whey, lactose, casein, etc.) so again, read labels.

Since it is only me, I always cut the recipe by at half or quarter. Even then I end up tossing some leftovers. It is very hard to cook/bake for one. ;)

A dessert that is too rich? My husband and I love this!! Along with making other goodies it truly screams the holidays to us. We often indulge on NYD while watching football. The kids adore it as well.

We also will do Ritz PB "candy" and also sometimes with caramel. It gives you the same salty/sweet combo that is so deadly. After the sandwiches are made, dip them in dark chocolate and top with sprinkles.

Well, it’s basically straight butter, sugar, and chocolate so, yeah, it left me feeling a little queasy. I’ve never had much of a sweet tooth though, so I probably should’ve known better.
 
This is my tried and true recipe for "Saltine Toffee" I make it every year
1 sleeve salted saltine crackers
Cover cookie sheet with foil, and non stick spray. Line crackers on the sheet, fill to edge with crackers (even if you have to break them in half)

In pan melt 1 stick salted butter, and 1 cup packed brown sugar. Bring to a boil. I stir gently with a wooden spoon while it's melting.

Heat oven to 350
.Pour hot mixture (and be careful, it is VERY HOT) evenly over the crackers. Spread with a knife if necessary. Bake for 10 min. Cool 1 min and then spread 1 bag of chocolate chips over the toffee. Return to the oven for 1 min or so until chocolate is just about all melted. Spread chocolate evenly with a knife or spatula to even it out. Sprinkle with chopped nuts. (I use a combination sometimes of nuts, craisins and raisins on one of the trays, just for variety). Store in an airtight container

I usually end up making at least 2-3 trays at it disappears very quickly, lol!
This is the recipe I use also. Comes out delicious every time.
