I'm looking for some new Christmas Cookie inspiration. I thought it would be nice to have it on a thread readily available when your getting ready to shop or bake. I've seen the other threads but I'm just looking for new. So I'll start hope you enjoy. 
PINA COLADA COOKIES
4 cups flour 1/2 teaspn salt
1 1/2 teaspn bkg soda 1 cup butter softened
2 cups brown sugar 2 egss beaten
1 1/2 teaspn rum extract 1 1/2 cups toasted coconut
4 cups white chocolate chips 2 cups toasted chopped macadamia nuts
1 (20 ounce) can crushed pineapple 3 drops pina colada candy oil **
** pina colada candy oil available at Michaels or AC Moore if they don't have it I substitute 1 teaspn coconut extract
Directions:
1. sift flour,salt & bkg soda, set aside. In large bowl cream butter and brown sugar. Stir in eggs, pina colada oil and rum extract, mix well. stir in dry ingredients until just combined. Using a large wooden spoon stir in drained pineapple, coconut, white chocolate and macadamia nuts. Cover bowl w/plastic wrap and refrig for 2 hours til firm.
2. Preheat oven to 350 line cookie sheets w/parchment
3. Roll dough into golf size balls, place 21/2 inches apart on cookie sheets. Bake for 15 - 20 minutes until golden brown. Let cool on wire rack.
