Christmas Cookie recipe exchange

I'm looking for some new Christmas Cookie inspiration. I thought it would be nice to have it on a thread readily available when your getting ready to shop or bake. I've seen the other threads but I'm just looking for new. So I'll start hope you enjoy. :santa:

PINA COLADA COOKIES

4 cups flour 1/2 teaspn salt
1 1/2 teaspn bkg soda 1 cup butter softened
2 cups brown sugar 2 egss beaten
1 1/2 teaspn rum extract 1 1/2 cups toasted coconut
4 cups white chocolate chips 2 cups toasted chopped macadamia nuts
1 (20 ounce) can crushed pineapple 3 drops pina colada candy oil **


** pina colada candy oil available at Michaels or AC Moore if they don't have it I substitute 1 teaspn coconut extract

Directions:

1. sift flour,salt & bkg soda, set aside. In large bowl cream butter and brown sugar. Stir in eggs, pina colada oil and rum extract, mix well. stir in dry ingredients until just combined. Using a large wooden spoon stir in drained pineapple, coconut, white chocolate and macadamia nuts. Cover bowl w/plastic wrap and refrig for 2 hours til firm.

2. Preheat oven to 350 line cookie sheets w/parchment

3. Roll dough into golf size balls, place 21/2 inches apart on cookie sheets. Bake for 15 - 20 minutes until golden brown. Let cool on wire rack.

Neapolitans
(I love to make and eat these. People always comment they have never seen them before.)

1 cup butter, softened
1-1/2 cups sugar
1 egg
1 teaspoon vanilla extract
2-1/2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon almond extract
4 drops of almond food coloring
1/2 cups flaked coconut, finely chopped
4-1/2 teaspoons chocolate syrup

1/2 cups semisweet chocolate chips
1-1/2 teaspons shorening

1. Line a 9-in x 3 in loaf pan with waxed paper; set aside. In a mixing bowl, cream butter and sugar. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well.

2. Divide dough into thirds. Add almond extract and red food coloring to one portion; spread evenly into prepared pan. Add coconut to second portion; spread evenly over first layer. Add chocolate syrup to third portion; spread over second layer. Cover with foil and freeze 4 hours or overnight.

3. unwrap loaf and cut in half lengthwise. Cut each portion widthwise into 1/4 in slices. Place 2 inches apart on ungreased baking sheets. Bake at 350 for 12-14 minutes or unti edges are lightly browned. Remove to wire racks to cool.

4. In a microwave or saucepan, melt chocolate chips and shortening, stirring until smooth. Dip one end of each cookie into chocolate. Place on wire reacks until set.
 
Mexican Polvorones de Canela (Cinnamon Cookies)


Ingredients

-1 cup butter
-1/2 cup confectioners' sugar
-1/2 teaspoon ground cinnamon
-1/4 teaspoon salt
-1 teaspoon vanilla extract
-1 1/2 cups all-purpose flour
-1 cup confectioners' sugar
-1 teaspoon ground cinnamon



Directions

Preheat oven to 350 degrees F (175 degrees C).
Grease cookie sheets.
In a medium bowl, cream together 1/2 cup confectioners' sugar and butter until smooth. Stir in vanilla.
Combine flour, salt, and 1/2 teaspoon of cinnamon; stir into the creamed mixture to form a stiff dough.
Shape dough into 1 inch balls. Mix together 1 cup confectioners' sugar and 1 teaspoon cinnamon; roll balls in cinnamon mixture.
Bake for 15 to 20 minutes in preheated oven, or until nicely browned. Cool cookies on wire racks.

I've never tried this recipe but will be attempting it this year and will be using red currant jelly instead of the raspberry jam the recipe calls for.

I have eaten these cookies and made the Linzer Torte they are based on and they are very yummy - especially that little hint of lemon.
 

Any chance you can post pictures of the finished cookies so we know what they are supposed to look like when done :thumbsup2
 
Ingredients:
2/3 c. butter or margarine
1 c. sugar
1 egg
1/2 tsp. vanilla
1 1/2 c. flour
1/3 c. cocoa
1/2 tsp. baking soda
1/4 tsp. salt
1 Tbls. milk
12 to 14 small (1 1/2-inch) peppermint patties

Directions:
Beat butter & sugar; add vanilla & egg, blending well. In a separate bowl mix together dry ingredients. Add to buuter mixture alternately with milk, blending well. Refrigerate dough about an hour or until firm enough to handle. (Dough will be a liitle soft.) Lightly grease cookie sheet. Heat oven to 350 degrees F.

Shape small portion of the dough around unwrapped peppermint patties, completely covering candy. Place on prepared cookie sheet; flatten slightly & crimp with tines of a fork around the edges, if desired. Bake at 10-12 minutes or until set. Cool 1 minute, remove from cookie sheet to wire rack. Cool completely.

(I buy the small pattie candy and cut in 4 then roll the edges so they aren't pointed.So they don't pop through the dough.You also get more cookies this way. I also put a drop or 2 of mint extract when making the dough. When rolling hte dough around the candy try to make it as smooth as possible. So they don't explode.)
 
Awesome! Subbing as I've been looking for some new recipes :) Well cookie recipes in general. Especially if they are Tried and True recipes :)

We make these every year (I think it is the same recipe). Very yummy, though time consuming to make.

Here's one I typed out earlier on a separate thread..

Jello Spritz Butter Cookies

3 and 1/2 cups flour
1 tsp. baking powder
1 and 1/2 cups butter
1 cup sugar
1 pkg. (3 oz.) dry Jello - flavor of choice
1 egg
1 tsp. vanilla
food coloring of choice

Preheat oven 400 degrees.

In a large bowl, mix flour with baking powder.

In a second large bowl, cream butter. Gradually add sugar and dry Jello, beating well. Beat in egg and vanilla. Stir in food coloring of choice to match Jello of choice (green for lime; a little red for cherry; more red for raspberry; yellow for lemon, etc.). Mix well.

Gradually add flour mixture, mixing well.

Force dough through cookie press (or use Electric Cookie Shooter) onto ungreased cookie sheets. Sprinkle with additional dry Jello, sprinkles, colored granualted sugar, or other decorations of choice.

Bake at 400 degrees about 8 minutes or until edges are golden brown. (Watch carefully - you don't want to burn the bottoms!) Cool a minute or less and remove from cookie sheets.

Makes about 10 dozen cookies

They are SO good - no matter what flavor of Jello you use..

I was thinking that also. I already copy and pasted that recipe, as well as your jello cookie recipe.
 
Here is my favorite recipe! I like it because you can use other food colorings and make the cookies different shapes for all the holidays. :thumbsup2

Candy Cane Cookies

2/3 cup butter or margarine, softened
1 cup granulated sugar
2 large eggs or 1/2 cup liquid egg substitute
2 teaspoons vanilla extract
1 teaspoon almond extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon red food coloring

1. Cream butter and sugar in large bowl with electric mixer at medium speed. Beat in eggs, vanilla and almond extract.
2. Meanwhile, in a small bowl, combine flour and baking powder; stir into creamed butter and sugar mixture. When well combined, divide dough in half; tint one half with food coloring. Wrap each piece of dough and refrigerate at least 2 hours.
3. Preheat oven to 350°F.
4. Divide each portion of dough into 32 pieces. Roll each piece into a 5-inch rope. Twist 1 red and 1 white rope together and bend the end to form a candy cane shape. Place on ungreased baking sheet. Bake for 8 to 10 minutes or until set and lightly golden. Remove from sheet; cool on wire racks. Store in airtight container.

My MIL did this 4 years ago or so. She put all of her recipes on the computer and made cookbooks for each child and grandchild. For the category separator page she put in the picture we take each year at Christmas of all the Grandkids. She put them in 3 ring binders so now if we print something off the internet we just 3 hole punch it and slip it into the cookbook. My MIL LOVES to bake. When you walk into their house (through the back door) there is a mud room and then you go into the kitchen. On the left side of that doorway is where she keeps her cookies and treats so EVERY grandchild does what I call the "cookie look"-as soon as they walk through that door the all immediately look to see what Grandma has ready for them. It's pretty cute.
 
Wow . These sound great. I have a few I never baked that I might try. Should I share them also even though I haven't tested them???

I actually already started one - the last Christmas in DD's old house.. I wasn't saving them to my computer, but I was printing them out on assorted Christmas papers I had designed with my clip art programs - and also was including scanned photos of my DGD baking Christmas cookies with me since she was old enough to kneel on a chair and hold a spoon.. I put them in a binder that I had covered with Christmas contact paper I picked up somewhere along the line - and each page (1 recipe per page) is in a sheet protector..

If I get back to it this year, I'm going to have to fool around with the fonts on my computer - and the print size I used - because I would like them to be as uniform as possible.. (That's the OCD coming out in me..LOL) :santa:
 
I found this recipe on RecipeZaar.com They're so good. They freeze very well.


36 reese's mini peanut butter cups, unwrapped
1/2 cup peanut butter
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar, firmly packed
1 large egg
1/2 teaspoon vanilla
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt

Cream peanut butter, butter, sugar and brown sugar until fluffy.
Add egg, vanilla, flour, baking soda and salt, mix well.
Roll into 1-inch balls (I use small cookie scoop) and place in mini muffin tins with or without papers.
Bake 8-10 minutes at 375°F.
When tins are removed from oven, immediately press 1 peanut butter cup into the center of the cookie.
Allow to cool completely before removing cookies from the tin.
 
Snickers Cookies
Makes about 60
1 cup margarine
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
60 miniature (bite-size) Snickers candy bars
chocolate glaze (recipe below)

Preheat oven to 350 F. Cream margarine, peanut butter, sugar and brown sugar. Add eggs and vanilla. Combine dry ingredients and add to peanut butter mixture. Take 1 tablespoon of dough and flatten into round shape in palm of your hand. Place Snickers bar in center and fold dough around it. Roll in palms of your hand to form a smooth ball with the Snickers bar totally covered with the dough. Place on an ungreased cookie sheet. Bake for 10-12 minutes. Remove from cookie sheet and place on a wire rack to cool. Drizzle top of cookies with chocolate glaze.


Chocolate Glaze

1 cup powdered sugar
2 tablespoons unsweetened cocoa
1 tablespoon milk

Mix powdered sugar, unsweetened cocoa and milk. Add additional as needed to thin mixture enough to drizzle from a spoon.

I have never done the glaze I think it would be too much.
 
Does anyone have a good potato chip cookie recipe?
 
Orange oatmeal cookies – makes 4 dozen cookies

Ingredients:
1 cup shortening
½ cup sugar
½ cup brown sugar
2 eggs
1 ½ cups whole wheat flour
1 tsp. baking soda
1 tsp. salt
½ tsp. nutmeg
½ tsp. cinnamon
2 cups rolled oats
grated orange peel of 3 whole oranges


Directions:
- Cream shortening and sugars until light and fluffy
- Beat in eggs
- Add flour, baking soda, salt, nutmeg and cinnamon
- Stir in oats and orange peel
- Drop by teaspoonful onto greased cookie sheet
- Bake 10 – 12 minutes at 350 degrees
- Let cool for five minute
