Choosing an officiant

We are having an Escape Wedding at Sea Breeze Point on August 18th of this year. It is a second marriage for both of us and our kids are older. There won't be any parents or attendants, and but for one person, all guests will be family. I picture it as a short, intimate service, with some religious elements. I have looked through the list of officiants that Disney recommends, and have visited the websites of the ones that provided such, and searched DIS for feedback on certain ones. I would love to have someone recommend one that they used, especially if their wedding was similar to what we are planning. I know that no one we choose is going to be "know" us, but I'd like to avoid having a service where I cringe because what is going on "just isn't us," either because it is too elaborate (trying too hard) or too sterile. Not looking for profound meaning in the ceremony, not looking to have everyone cry, just want everyone there to feel comfortable and think, "yeah, that's nice, good way to start their life together." Thanks for any information you could share.
 
We are using Kevin Knox, who many brides have recommended to us.

I've found with him, you can personalize the ceremony to make it perfect for you. He has so many options and you can really make it your own. :thumbsup2
 
We used Theresa Knox. She was very personable and provided great guidance. My husband is Jewish and I am Methodist, so we wanted someone who would be respectful of using language that would be inclusive of both religions. My husband found something online he wanted and she was able to incorporate it into our ceremony.
 
Thank you ladies. We contacted Kevin Knox and we couldn't be more pleased with his site, customer service and information. We watched his video explaining why he does what he does, and my 16 year old daughter said "You should get Rev Kev - he sounds perfect for you."
 

I have a related question-does anyone have any recommendations for a good rabbi ? Anyone have any good (or not-so-good) experiences to share?
