I also have some cholesterol issues. I was warned at my last physical, so I have to get the number down--again. I was on meds a few years ago, but was able to stop them. Try to keep your saturated fat intake at or under 20 grams per day. Really monitor this number. Cheerios, oatmeal and cooked oat bran cereals can help (personally I can't stand oatmeal, but I can tolerate the cooked oat bran cereal, something with the texture). When you are forced to do fast food--and realistically this does happen--pick the healthier choices. Typically, I will do a children's meal hamburger and the fruit option instead of fries. If you are craving fries, go ahead and eat the children's size portion.
Find your vice and figure out a way to enjoy, but not get overwhelmed. I love chocolate and cheese--not together of course. I can eat lowfat chocolate pudding or lowfat chocolate frozen yogurt and be satisfied. I cannot, no way, stomach fat free cheese--it is gross. So I use lowfat cheeses. Also, when I have a cheese intensive dish, I will go meatless. One thing to watch out for when doing lowfat is to be aware of the sodium levels of food. To get things to taste decent, the sodium levels may be raised substantially. Good luck.
