Chocolate Brownie Recipe Please.....

Can you help my DH? He loves to bake and has been experimenting with different Chocolate Brownie recipes and hasn't quite found THE one :)

Do you have any to share?
 
Basic Brownies

1/2 cup (125mL) butter
2~1oz squares (2~28g) unsweetened chocolate
1 cup (250mL) sugar
2 eggs
1/2 teaspoon (2mL) vanilla
1/2 cup (125mL) flour
1/2 teaspoon (2mL) salt
1 cup (250mL) chopped nuts

Preheat oven to 325° (163°C). In saucepan, over low heat, melt butter and chocolate until smooth. Stir in eggs, sugar, vanilla, and mix well. Add flour, salt, and chopped nuts. Spread into a greased 8x8 inch (20x20cm) baking dish. Bake 40 minutes. Easier to cut when cooled.
 
One Bowl Brownies (with variations)

List of Ingredients



4 oz (4 squares) unsweetened chocolate
3/4 c butter
2 c sugar
3 eggs
1 tsp vanilla
1 c flour
1 c chopped nuts, optional

Cream Cheese Brownies

Use 4 eggs in place of 3 in brownie recipe
8 oz cream cheese
1/3 c sugar
1 egg
2 tbsp flour

---------------------------

Rocky Road Brownies

Brownies as directed above

2 c mini marshmallows
1 c semi-sweet chocolate chips
1 c chopped nuts

------------------

Peanut Butter Brownies

Recipe as above, reserving 1 tbsp butter and 2 tbsp sugar
2/3 c peanut butter

-----------------

Cake-like Brownies

Recipe as above, adding 1/2 c milk
increase flour to 1 1/2 c

Preheat to 350. If using glass baking dish, 325.
Grease a 9 x 13 baking pan, then line with foil.

Microwave: chocolate and butter in a large bowl. Microwave on high for about 2 minutes, or until butter melts. Then stir until chocolate melts.

Stove top: combine chocolate and butter in a heavy 3 quart saucepan. Stir constantly, over low heat, until melted.

Stir in sugar and mix until well blended.
Add eggs and vanilla, mix well.
Stir in flour and nuts, mix well.
Spread in prepared pan.

Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out with fudgy crumbs.
DO NOT OVERBAKE!!

Cool in pan and then cut into squares

Makes 24 brownies. These are fudgy brownies.

Cream Cheese Brownies

Mix brownies as directed above, using 4 eggs in place of 3.

Pour batter in prepared pan.

Mix cream cheese, sugar, egg and flour. Beat until well mixed
Spread over brownie batter, then swirl with a knife to marbleize.
Bake 40 minutes.

Rocky Road Brownies

Prepare brownies as directed. Bake 30 minutes.

Immediately sprinkle marshmallows, chocolate chips and nuts over hot brownies.
Bake 3 additional minutes or until topping begins to mix together.

Peanut Butter Brownies

Reserve 1 tbsp butter and 2 tbsp sugar from brownie recipe above.
Prepare brownies as otherwise directed.
Spread brownie batter in prepared pan.
Mix reserved ingredients with peanut butter.
Spoon over brownie batter and thens swirl to marbleize.
Bake as directed above.

Cake-like Brownies

Prepare recipe as above, adding milk with eggs and vanilla.
Increase flour to 1 1/2 c

NOTES:
I have not tried all of the variations, but we do like the basic brownies

Hazelnut Brownies

1/2 cup (1 stick) (125mL) unsalted butter
2 oz. (56g) unsweetened chocolate
1 cup (250mL) sugar
2 eggs
1 teaspoon (5mL) vanilla
3/4 cup (175mL) flour
1/2 teaspoon (2mL) baking powder
1/2 teaspoon (2mL) salt
1 cup (250mL) chopped hazelnuts, toasted
1/2 cup (125mL) chopped dark, bittersweet chocolate

Preheat oven to 350° (176°C). Melt butter and chocolate together in double boiler pan. Remove from heat and allow to cool. Whip together sugar and eggs. Add vanilla and cooled chocolate mixture. In separate bowl, sift together flour, baking powder and salt. Stir flour, baking powder, and salt mixture into butter-chocolate mixture just until blended. Add hazelnuts and chopped dark chocolate. Pour into greased and floured 8x8 inch (20x20cm) pan. Bake at 350° (176°C) for 25 minutes or until fudgey but not firm. Cool, cut into squares and serve.

Godiva Deep Cocoa Brownies

Deep Cocoa Brownies
1 1/3 cups all-purpose flour
1/2 cup cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup miniature chocolate chips
1 cup butter
3 ounces dark chocolate -- coarsely chopped
5 large eggs -- at room temperature
2 cups sugar
2 teaspoons vanilla extract
Confectioners' sugar

Make the brownies:
Preheat oven to 325ºF. Spray 13x9x2-inch baking pan with nonstick cooking
spray. Set aside.
Sift together flour, cocoa, baking powder and salt.
Toss chocolate chips with 1 tablespoon of flour mixture. Set aside.
Place butter and chocolate in medium-size bowl. Microwave at high (100%
power) for 1 minute. Stir. Microwave 30 seconds and stir until smooth. Let
cool.
Whisk eggs in large bowl for 1 minute to blend. Add sugar and whisk for 45
seconds or until just incorporated. Blend in melted chocolate mixture and
vanilla extract.
Add flour mixture and slowly stir in, mixing until flour is absorbed. Mix in
chocolate chips.
Spread batter into prepared pan.
Bake for 30 minutes or until set. Cool in pan on wire rack. Remove from pan
and cut into 4 quarters. Then cut each quarter into 4 squares. Just before
serving, sprinkle with confectioners' sugar.

Hyper Chocolaty Brownies

1 3/4 cup dark brown sugar
12 oz. unsweetened chocolate
1 1/8 cup white bread flour
10 tbsp unsalted butter
3 large eggs
1 vanilla bean
1/2 tsp salt

Preheat oven to 350 F. Thoroughly grease a 9" * 9" square pan and set in the refrigerator.
Break the chocolate into small pieces, melt carefully in a double boiler. Remove from heat, and set aside to cool.
Slit the vanilla bean lengthwise with a knife and scrape the insides into a large bowl along with the sugar and the salt. Mix well, breaking up lumps in the sugar.
Cut the butter into small squares. Mix it in to the sugar (a wooden spoon works great for this) until thoroughly
blended, minimizing air addition (i.e.do not cream).
Stir in the chocolate and mix until fully blended.
Add the eggs, one by one, stirring each until it is fully incorporated before adding the next.
Blend in the flour slowly - this will take some effort. The mix should have the consistency of firm cookie dough.
Spread the mixture into the pan and smooth with a knife.
Bake at 350º F for 30 minutes. Cool completely and cut into squares as large as you want when you are ready to serve.

Trippple Chocolate Brownies

3/4 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter
3/4 cup sugar
2 tablespoons water
6 ounces semisweet chocolate
1 teaspoon vanilla
2 eggs
1/2 cup white chocolate chips
1/2 cup milk chocolate chips
1/2 cup finely chopped nuts

Preheat oven to 325 degrees.
Combine flour, baking soda and salt. Set aside.
In a saucepan combine butter, sugar and water and heat just to a boil. Remove from heat and add semisweet chocolate and vanilla. Stir until chocolate has melted and mixture is smooth. Add eggs, one at a time, beating well after each addition. Gradually blend in flour mixture. Stir in white chocolate chips, milk chocolate chips and nuts.
Spread batter in greased 8" square pan and bake for 30-35 minutes.
Cut into 2" bars.
 
Yep we have chocolate chips.

Baker’s One Bowl Cream Cheese Brownies

Prep time: 15 minutes Bake time: 40 minutes

4 squares BAKER’S unsweetened baking chocolate (OR SUBSTITUTE 3/4 cup cocoa and 3 Tbs. oil)
¾ cup (1 ½ sticks) butter
2 ½ cups sugar, divided
5 eggs, divided
1 ¼ cup flour, divided
1 pkg. (8 oz.) PHILADELPHIA cream cheese, softened

PREHEAT oven to 350° F (325° F for glass baking dish). Grease foil-lined 13 X 9-inch baking pan.

MICROWAVE chocolate and butter in large microwavable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted.

STIR 2 cups sugar into chocolate until well blended. Mix in 4 eggs. Stir in 1 cup of flour until well blended. Spread batter in pan. Beat cream cheese, remaining ½ cup sugar, 1 egg, and ¼ cup flour in same bowl with wire wisk until well blended. Spoon over brownie batter. Swirl batter with teaspoon to marbleize.

BAKE 40 minutes or until toothpick inserted in center comes out with fudgy crumbs. DO NOT OVERBAKE. Cool in pan. Cut into 24 brownies.
 
Here is a great and simple recipe that is always a hit when I make it:

1 box any kind of boxed brownie mix
1 box my-t-fine chocolate pudding (prepare on stovetop)

Empty brownie mix into bowl
Prepare pudding
Pour pudding into brownie mix
Stir until smooth
Pour into your choice of pan size
(optional: pour chocolate chips, nuts, or *peanut butter chips* over the top)
Bake at 350 until fork comes out clean

Trust me - these are soooooo good1

I also have those chopped hazlenuts too---found them at Hazlenut Hill in Oregon while visiting mom last November. I really live in pecan territory, so I consider myself lucky to have the hazlenuts, and already chopped too!~
 
Cool - Now I am going to have to bake some brownies this weekend. But which one to try first..... :goodvibes

So you don't add the eggs or milk or oil that the mix calls for? Just the pudding?? Sounds delicious and REALLY easy.

You got it! No eggs no milk no nothing-other then pudding! They are so moist and so yummy too!
 
Why do I read brownie threads while I'm dieting ????? I'll just have to print the thread and make one as I reward when I lose the weight. Hope I can hold out. :rolleyes:
