Chilli for dinner

What are you having? I can actually like not feeling too god, since Chris is feeling a bit sympathetic and said he would make dinner. So I asked for Chilli. Hot Chilli!!!! Is it time to eat yet????? LOL!!!;)
 
I love hot Chilli...nothing like good comfort food. Hope it helps you feel better.....I have no idea what to fix today...but you may have given me an idea. Don't forget to top it with cheddar cheese..Yummmy.:D
 
I hope you feel better soon! Chili sounds great! Here in S. Florida it's gorgeous...LOL! Cloudy, sprinkles on and off, and cooler! Yeaaaaaaaaaaaaaaa! I've turned off the A/C and opened the doors. It's down to 74 degrees in the house. :teeth: I think that would be a heat wave for parts of the country. LOL! Are you chilly enough in Bloomfield? I used to go to school in Montclair.
 
Im coming to your house! Im really in the mood for Chili, but no one in my house likes it.

We may get Boston Chicken for dinner or Im going to make Hot Dog Surprise(as DH named it). Its fried cut up hotdog, potatoes, and egg. Last night I made a big meal of veal parm with pasta & garlic bread, so tonight we are keeping it simple.
 

I have no idea what I'm going to cook tonight. I might make my SO a burger and the kids and I might make some tacos. It's too early to think about dinner.

I like chili a lot but I'm picky, it has to be made with chopped beef not ground beef and it has to be very, very spicy.

I like it with cheese and cornbread.

Tonight is chicken and broccoli divan cassarole... micro greens with french vinegrette and maybe a glass of white wine since I have to open it for the cassarole.

The chili sounds good though! It is snowing like mad out there! We already have about 5 inches!

I love my chili super thick and topped with grated cheese, a few crisp tortilla strips and chopped brined japalano peppers. Oh and a dollop of sour cream cuz I always go too crazy with the chilis! Mmmmm....
 
Having steak tonight. Had chili a couple of nights ago. DH made it so spicy I couldn't eat it. I tried I really did. It tasted really good. I just couldn't get past that burning sensation in my mouth and on my lips. I guess I am a big wimp in the chili world. Then again he was raised in Texas and grew up in the land of hot spices.
 
Four chicken breasts skinned and cut into ½ cubes.
Two large (12 to 16 oz) cans of pineapple the more the merrier
Two - three nice onions
One 12 oz can white beans
One 12 oz can black beans
One 12 oz can diced or crushed tomato
One 6 oz can tomato paste
One 6 oz can tomato sauce
One generous glob of pickled jalapeño peppers, minced (about 4 to 6oz jar)
Chili Pepper
Garlic Powder
Cumin
Tabasco
Sour cream

Drain the sugar water from two 12 to 16 ounce cans of pineapple chunks into a big old pot. Set the drained pineapple aside. Poach the chicken in the pineapple water in the pot on the range at medium.

Cut up a couple of nice onions, small cubes and toss into a skillet with a little olive oil. Fry these bad boy up till they dark brown.

When the chicken is cooked add the cans of beans and tomato stuff into the pot of boiling pineapple juce and chicken.

Don’t let the onions burn but get close. Toss them into the pot too.

Drain the jalapeño pepper juice into the pot, mince up the pepper and heave them in the pot. The onions should be done put them in too.

Use liberal amounts of chili pepper and garlic. More garlic than chili powder but not a lot more. Say two three soup spoons, maybe half to a third the amount of cumin. A few good shakes, not drops, shakes of Tabasco sauce add more of each to taste. You are looking for an aftertaste with a kick so don’t skimp. You want it hot hot hot so that you will need the sour cream to be able to eat it.

Stir in the pineapple and let cook for a few hours.

Serve with sour cream.
 
it sounds beautiful in So Florida! I'll be there in a couple of weeks! It's cold, rainy and damp here.

Oh, and I always put lots of cheddar on my cilli! ;)
 
Taryn, that chicken and broccoli casserole is one of my family's favorites! :)
But we aren't having that tonight. Tonight we are having smoked pork chops, scalloped potatoes and some green beans.
I have some ground beef defrosting in the microwave to make meatballs for wedding soup that I am going to make later this week.
And I am going to make a pot of chili too, either tonight or tomorrow, to have sometime when our older 2 DDs are home from college next week. I have been using a recipe that I found on-line for "Wendy's" Chili. I changed it a little bit and it really is close to the Wendy's recipe, *I* think. Let me know of you would like the recipe.

Some hot, spicy chili might be just the things to ward off your cold. I love it with cheddar and crushed up saltines....yummy!

We went out this afternoon and had a big lunch so I ended up having scrambled eggs and toast for dinner. I would have traded it for some good chili though.

I would love to see if your recipe is anything like mine... I am always looking for ways to improve stuff. I started adding curry after a friend of mine made something similar.

Can I come to your house tonight? I am looking forward to the chicken but it has been sooooo long since I ate anyone else's cooking! And probably about two years since I had a pork chop!

Is it just me or sometimes do you just crave something that someone has made for you, something that would be a little different than the way you would do it? Or served with something that would never occur to you?

Pork chops are a favorite of MINE (not necessarily my FAMILY's :rolleyes: ) since I do like them and they are so easy to cook. Shake and Bake, grill, etc.
I have been getting these SMOKED pork chops as well lately since they too are easy to cook and taste like ham - but not as much fat (I don't think...).
My Chick and Broc Casserole is basically: Broccoli (I just use defrosted frozed chopped broccoli) covered with cooked chicken breast cut into bite sized pieces. That is topped with a mixture of cream of chicken soup, mayo (I use the light stuff), and some white wine. Then I sprinkle the top with shredded cheddar cheese and some dried breadcrumbs. This is not in my original recipe, but I make some boxed stuffing mix (on the dry side) and make that my first layer - then the broccoli, chicken, etc. That way, I have a one dish meal. I would like to just make the Chick and Broc once in a while and serve it with rice, but my family prefers it with the stuffing.
