I made this today. I eliminated the slow cooker because I doubled the recipe. I added black beans, fresh chili peppers, and used diced tomatoes with jalapenos and one can with oregano and basil. Iused two Costco rotisseri chickens and it was fabulous. It made a huge pot doubling the recipe. Also, I didn't use water but the broth from boiling the Costco cooked chickens and two cans of chicken broth. I am going to have to make more. It won't last another day. I also added a whole bunch of cilantro.
