I've never had Chicken Shawarma before but am interested in trying it at Tangierine Cafe.

Can you describe it to me? What spices are used? Is it dry?

It's a dry rub that contains cumin, coriander, paprika, turmeric, cayenne, garlic, pepper and a bit of cinnamon.

Go to Tangierine Cafe when there is a line. If you don't, your meal may be served to you either a) after it has been plated and sitting for several minutes, or b) the chicken (or lamb) has gone round and round on its spit without being shaved for several minutes and the exterior dries out. When they finally do shave the meat to plate it for you, one side of the meat will be dried out.
