chicken recipe for a crowd

I feed a group of teen boys weekly. I generally do beef based and/or pasta dishes. I want to do something with chicken, preferably pieces (ie leg, breasts, boneless breasts).

It needs to be easy and filling. Any suggestions?

I make a Taco Soup recipe that is really good, cheap, and easy. I got it from a weight watchers meeting and it is fairly low in points too. It makes a HUGE crockpot full and add a tray of cornbread and/or salad and you can feed an army with it! My mom who HATES my cooking (thinks I make "weird" things when in fact I cook healthy meals) loves this. It has also been a big hit at many family functions.

Add to Crockpot in this order:

3 FROZEN Chicken breasts (about 1 lb)
1 packet taco seasoning
1 packet ranch seasoning
1 onion diced
1 can diced tomotoes
1 can Black beans
1 can kidney beans
1 can white beans (cannellini or something similar)
1 can vegetarian baked beans
1 can corn
DO NOT STIR AT THIS POINT.

Cook in crockpot on low all day. Before serving remove chicken and shred with fork. Stir back in to soup.

Salsa Chicken

3-4 boneless skinless breasts
1 cup frozen corn
1 can black beans, rinsed
1 jar salsa

Cook in crockpot all day on low. Shred chicken and mix together. Serve with warm tortillas, cheese, sour cream, and chips.
 
Buttermilk chicken w/ honey. My kids who are super picky love this. I do this with chicken strips, but I'm sure it would work with various pcs. Soak skinless chicken overnight in buttermilk. Heat oil in pan over med heat. Dredge chicken in flour seasoned w/ salt, pepper, & a little cayenne. Cook until golden brown and done through. Serve with honey. Sounds weird, but it is awesome! I can't cook with oil or white flour right now, so tonight I'm making it with fat free buttermilk, panko bread crumbs instead of flour, and baking in oven.
 
Buy as much chicken as you will need,dump cheap maple flavored syrup on it and bake(can add some sweet spice if you like....or you can use honey with a bit of pumpkin pie spice . You can even buy the big cooking bags and cook it in one for easy cleanup.I did the maple chicken at church with roasted potatoes.
 
I make chicken and sausage in the crockpot. I use chicken breasts cut into bite size pieces or you can use skinless chicken thighs. I bake the sausage first too then cut into bite size pieces. Put in the crockpot with your favorite spahetti sauce (I do use my own but any fav will work) and season to taste (I make it very spicy with red pepper and hot sausage but you certainly don't have to) Leave in the crockpot on low all day and this goes great over rice, pasta or even on a roll for hungry boys. I make this as a pot luck for work and it is everyone's favorite.
 
I often just get chicken thighs when they're on sale -- put them in a pan and pour barbeque sauce over -- cook at 350 for about 35-45 minutes. Works with drumsticks, too.
 
We put a 3lb bag boneless skinless chicken breasts thawed in a crockpot with 1 can cream of mushroom soup and 1 can cream of chicken soup, cook for the day. Take two forks and shred the chicken up, cook for another hour to let it get more flavor. We either serve on a bun as sandwiches or over mashed pototoes. Major comfort food. You don't need to stir it at all just dump the canned soup on top and let it cook. Super easy, cheap and good. You can easily double the recipe if needed.
 
I like to go with a Greek style chicken meal when feeding a crowd. Bake the breasts (I buy the frozen bag in bulk at warehouse club) with oregano (you can marinate ahead of time with some olive oil and spices too). Serve with the Tzatziki sauce you can buy in the quart size at Costco. Side dishes: orzo (cheap and easy and you can cook ahead and reheat), green salad, pita bread with hummus.
 
I make this casserole in a 9x13 pan:

3-4 chicken breasts cut up, cover w/2 cans cream of chicken soup, then sprinkle w/frozen broccoli

cook 40 minutes on 350 or until chicken completely cooked

when done, cover w/2 cups (i cook 2 cups instant rice) cooked white rice and then sprinkle w/cheese - put in oven until cheese melted.

Have seen this done w/stuffing instead of rice, but my strange crew doesn't like stuffing!!
 
Chicken thighs and drumsticks (relatively cheap) in a baking dish
pour orange juice over them so there is about a 1/4 or 1/2 inch in bottom of pan
sprinkle with garlic powder
sprinkle with soy sauce
sprinkle with brown sugar
cover with aluminum foil and bake at 350 for a couple of hours covered. remove cover and brown chicken (you may want to drain off some of the juices)

it falls off the bone and is delicious and cheap and kids LOVE it
 
How about Chicken Pot Pie? I made this last night, doubled the following recipe and it served 6 adults and everyone had seconds. Serve with a salad and breadsticks.

Chicken Pot Pie

1 10 oz package of frozen peas and carrots thawed( I like to use mixed)
1/2 cup chopped onion
1 can mushrooms
1/4 cup margarine or butter
1/3 cup flour
1/2 tsp. salt
1/2 tsp. of dried sage, marjoram, OR thyme crushed
1/8 tsp. pepper
2 cups chicken broth
3/4 cups milk
3 cups cooked shredded chicken or turkey
1/4 cup parsley
1/4 cup chopped pimiento

One container of Grands refrigeraged biscuits

In a saucepan cook onion and mushrooms in margarine or butter until tender. Stir in flour, salt, pepper and the dried spice of your choosing. This makes a roux. Add chicken broth and milk all at once. Cook and stir till thickened and bubbly. Stir in drained peas and carrots, chicken or turkey, parsley, and pimiento. Heat until bubbly. Pour mixture into individual casseroles or use a 9x13 baking dish. Unwrap the biscuits and cut each one into quarters. Top the chicken mixture with biscuits and bake in 400 degree oven for 15 minutes or until biscuits are browned.

If you don't want to use biscuits you can use a premade pastry crust. Top the mixture with crust, flute edges and cut slits in top to vent.Bake 450 degrees until pastry is browned.

Hello, can you tell me what kind of you cheese you use? are you talking about shredded or grated? I'm in Manchester too :wave2:

A question on the taco soup....for the canned items, do you drain the liquid or just open the cans and dump everything in the crockpot?
By the way, the pets in your picture look exactly like my late dog and cat. I've been meaning to tell you that whenever I see your posts!

For a bunch of teenage boys, this is what I would do.. You can buy the really large family packs of drumsticks and/or thighs - plenty of meat on both..

If you want them a just a tad crispy and brown, the last few minutes of baking turn on the broiler - but watch them closely..

I don't think teenage boys are into "fancy" - they like spicy and/or hot..:)

THIS!! We just had this for dinner. We also like taco soup, but have only used hamburger.

when we make taco soup we put all liquids in the soup.
 
Chicken In a Pot

1 lb of chicken breasts(boneless,skinless)
2 dry packs of Good seasons salad dressing
1 package of cream cheese
2 large cans of cream of chicken(or mushroom)soup
box of white or brown rice

Put the chicken and good seasons in a crock pot low for about 5-6 hours- you don't have to add any liquid. Then about 1.5 hours before eating or less if you turn the crockpot to high. Take a spoon and shred the chicken- it is always so moist that it just shreds right apart. Add the cream cheese and cream of chicken soup. Make your rice and everyone can make their own plates. Pour the mixture over the rice. DH always insists we have peas with this too. I don't like them- but he does- and mixes it all together. :confused3
