How do you cook your chicken parmesan??? I am looking for a new/better way to make my chicken parm..I usually tenderize my meat then dip in EVOO and then in bread crumbs then I back it....so

How do you make your version?
 
I dip it in egg, then bread crumbs. I fry them, then put them in a dish with marinara sauce and lots of mozzarella and bake til the cheese melts. It is my DH's favorite meal! (with semolina bread and spaghetti)

I've never heard of dipping it in olive oil
 

I first dredge the chicken in flour, dip the chicken in egg, then seasoned bread crumbs and fry it in olive oil. Put some marinara sauce on the bottom of a baking dish, put the chicken in the dish, top with more marinara and cover with mozzarella and parmesan cheeses. Bake until the cheese is bubbly. I serve with angel hair pasta.
 
My version is very similar to the recipes above, but I start with very highly seasoned bread crumbs. I start with about 3 cups of Progresso Italian Seasoned bread crumbs. To that, I add 1 tsp salt, 1/2 tsp fresh cracked pepper, 1 tbsp dry mustard and 1 tsp garlic powder. Then I add 3 tbsp chopped fresh parsley and 2 tbsp chopped fresh basil. I grate into this mixture about 1/4 cup of fresh parmagiano-reggiano cheese. Finally 2 tbsp olive oil (right into the bread crumb mixture). Mix it well. Dip thin sliced chicken breasts in egg, then coat well with bread crumb mixture. Saute in olive oil and butter until golden, place in baking dish and spoon marinara sauce over it. Bake at 350 for 20 mins, then add shredded mozzarella and bake 10 minutes more. Highly seasoned chicken really makes a difference :)
 
Flour, egg wash with garlic grated into it, bread crumbs then fried in vegetable oil - then in a pan with sauce, chicken, sauce, cheese oven.

Dip in seasoned bread crumbs- I use 4C and then add extra garlic powder, pepper and Parmesean cheese.

Fry in Olive Oil - doesn't have to be EVOO_ regular works here for frying.

Then bake in oven topped with sauce and cheese until cheese melts and chicken is cooked through.
 
I don't fry or bread mine. I bake it in the oven in a bit of sauce, then when it's about done throw some parm cheese on it and put it back in the oven until it's melted. I'm not sure why, but it's always super tender and very good!
