Yes i make Egg Foo Young! hahaha!!! crazy i know!
alright Bunchy, i use chicken in mine:
what you need to serve 4
6oz boneless chkn brst.
salt & pepper
1tbsp corn starch
3egss
1/2 tsp scallions finely chopped
3tbsp veggie oil
4.5 oz of green peas ( i just use half a can!! haha)
1tsp soy sauce (sometimes i just add it without measuring!! i like soy sauce!)
Cut chicken into small slices (i use kitchen shears and then beat with a cleaver!!). Place them into a shallow dish.
Mix 1/2 tsp salt, dash of pepper and cornstarch together in a bowl.
pour this mixture over the chicken slices turning the chicken so all pieces are coated
beat eggs in a bowl with pinch of salt and the scallions (i add a dash of pepper here too)
Heat veggie oil in a WOK add chicken slices and fry for 1 minute on high make sure that all the chicken gets heated.
Pour egss over chicken and slightly scramble until set BUTTTTT do not stir too much or the mixture will begin to break up and not gel together.
Add the peas, soy sauce and salt to taste and blend well
All done and it's sooooo yummy!!!!
I like to serve it up OVER steamed white rice and in a warm bowl so that no other side dish is needed, it's just a meal in a bowl!
