We are booked here and are on the dining plan... is my understanding accurate that for 1 table service credit you can get either the 3 course prix fixe menu ( which gets you an app) or you can pick just a main and dessert?

That is correct! My husband and I go there for every trip and always take advantage of that deal!

Yes. The prix fixe at Chefs is one of the few places where you can get an appetizer (starter) when using the DDP. Otherwise you can choose any entree (main), dessert and standard fountain beverage (e.g. soda, coffee, tea, iced tea, lemonade) for 1 TS credit.
