I was wondering if folks could share contact information for the executive chefs of various restaurants, so I can contact them about special dietary considerations. We've had great success doing so in the past. Last May, we were treated grandly by the executive chef of Spoodles.

We'd like to contact the chefs at Maya Grill, Citricos, Narcoossee, Flying Fish, Jiko, and especially Artist Point. Your personal experiences with the chefs would be greatly appreciated, and your recommendations for how you feel these folks can customize their offeringsl to conform with a more healthy paradigm (so we could have a better idea about what we should consider asking for). (By "more healthy," I mean lower calorie, more vegetable-focused offerings, avoiding reliance on butter/fat, bread and starches.)

I have experience at all these restaurants as a person who didn't care much about how healthy the food was; this is going to be a much different experience.

Also, if you feel there are places we should consider instead of those listed above, please let me know.
 
I have had a few conversations with Chef Jason at Narcoosees regarding a vegetarian meal for our upcoming trip. He has been very accomodating and
enthusiastic about helping me plan my dinner. This is my first experience contacting a Disney chef but I've been quite impressed. The number is
407-824-2441. We will be dining there on 12/27/02 and I'll let the board know how it goes.
 
Chef Annette Grecchi-Gray at Jiko will do whatever it takes to satisfy your dietary needs with the proper amount of prior notice (usually 2 business days/24 hours-it allows her to make any purchases she may need).

Chef Robert at Artist Point is a terrific person and very willing to discuss menu selections.

They just did a round of changing chefs for some of your other restaurants listed, so I can't help there. I'm having a hard time keeping track of who is cooking where these days!

A direct call to the specific restaurant will probably be your best bet in attempting to talk to the chef. WDW-DINE may be able to help with which chef is now where, but I'm not certain. Sometimes those folks confuse easily! ;)

I believe I met Chef Annette when she was in charge of Narcoossee. We'll surely be going to Jiko this time around.

Is the "Chef Robert" you're referring to Robert Adams, the original executive chef at Artist Point? It would be nice to know that he's back there. He was very helpful with my dietary restrictions a few years back.
