I tried booking dinner reservation at 180 day mark (6am est) and the only availability was after 9:00pm. My question is does this restaurant hold back tables for a later release date? TIA

Don't know if they hold back tables, but I would keep checking. I was just there last month and when I first looked the only availability was a late time. Later I was able to get the time I wanted. A lot of people cancel. If you are going early say 4-5pm I have found you can often walk in. The exception to the rule is holidays.

I'm not sure what they do, quite honestly.
We had an ADR last Wednesday for 9:00.
We were tired and got to DS early, about 8:00 so we went up and asked if we could check in early. Figured it can't hurt to ask, right?
They said yeah but wait was running about 40 min. We figure, why not, we'll just sat in the bar area and if we get in before 9:00, great.
Well, our buzzer went off 1 min later. I thought something was wrong with it but nope, our table was ready that fast

I tried and tried for weeks to get a reservation other then 9pm I too also started at 180 mark. Finally, I was able to grab a 5:55, its a little early but I haven't been able to get anything else.

I will tell you my DH and went for lunch in January and it was excellent!! Good luck!
