My vote is for Toledo (inside the Gran Destino tower at Coronado). My friends and I had a wonderful time there. The meats and cheese varieties were fabulous. I liked the cheese vertical where you can try cheeses aged for different periods of time and compare how the flavors changes.

I think Narcoossee's and Flying Fish have been my favorites.

(Not to go off the rails, but I hope you are aware that Costco now has a jumbo cheese flight package available - you have to provide your own honey/nuts/jelly/grapes/olives/crusty bread, but it's still pretty good when eaten while watching WDW videos online...)

How cool is that? I would love to try that! I fear the NBA may be making that impossible if I keep my trip this year, but that's a tick mark in the reschedule column if they do wind up keeping them at Cornoado for their "bubble" as is rumored.

We like the one at the Brown Derby Lounge (outdoor seating area). Below is not my photo but is very similar (if not the same) from the last time we had it in November.
