The ticket only comes with 5 "plus" days if you purchase it that way. The ticket that you're referring to would be a 10-day MYW with Magic Plus (no expiry). The 5 pluses can be used for admission to DQ, PI, TL, BB and WWoS. If you also want to be able to park hop, you will want the 10-day MYW Premium pass (includes 5 pluses and park hopping) and not the 10-day MYW with Magic Plus (includes pluses but no park hopping).

You only need to purchase the "no expiry" option if you do not intend to use all of your park days and plus options within 14 days following the first use of the pass. This actually gives you 15 days to use a ticket (the first day of use plus the 14 days that follow).
In other words, if you're planning a long trip for next year and will use up all of those days on your tickets while you're in WDW, then you do not need the no-expiry option. The no-expiry option is for those who prefer to buy a single ticket and make use of it over two or more visits.
The clock does not start counting down on that expiry ticket until you've used it for the first time. So, you could purchase your MYW tickets today and not visit WDW for several years and they should still be good. Disney usually raises prices about once every 12-15 months. If you know that you will be visiting WDW and you have the cash to lay out for tickets now, then it may make sense to get them. I would not carry a balance on my credit card in order to purchase tickets.
