Cheap Meal Ideas

Our favorite cheap fast meal is:

2 bags of Cesar salad mix topped with
1 bag of pre-cooked frozen shrimp (thawed)
extra parmesan cheese (if we have any in the frig.)

I do a lot of CHEAP cooking...but healthy.

First thing I do when I get home is put 1.5 cups of quinoa in a bowl, cover with water.

Then preheat the oven to 350.

I take a few frozen tilapia fillets out of the freezer, put them on some greased tinfoil on a cookie sheet. Spread a thin layer of mayo on top of them. Then a good portion of lemon, dill, and pepper.

Start pot of boiling water (2.5 cups or so). Drain quinoa, rinse again. Drain again. Put into the boiling water and cover. (Takes about 20 minutes).

Put fish in oven, bake until done (about 25 minutes).

Chop up a few broccoli heads pretty fine. Throw it in with the quinoa for the last 6 minutes or so.

When the quinoa/broccoli is done, I add a tablespoon of pesto.

Serve the fish with the side of pesto quinoa/brocoli. It's so so so good. I eat this, literally, 4 - 5 nights a week.


Another meal we all love is chicken breasts, black beans, a jar of salsa in the crockpot. Shred it when I get home. Add 1/2 block of cream cheese and a can of corn in the last 10 minutes before I serve.

Then I make some instant brown rice, serve the chicken stuff over that or else on tortillas with the std taco fixings.


Or, I take a big skillet, get it hot, add EVOO, some crushed garlic, and some chopped broccoli. I also have either a pot of water boiling for quinoa or noodles. To the skillet I then add about 1 cup water, a few boullian cubes, and slices of lemon. Get that going, get the brocoli cooked, then add a handful of frozen deveined, deshelled shrimp. Cook all together until the shrimp are done. Take out lemon slices. Add some cream to the pan to thicken it a bit, and some crushed red pepper.

Serve over the quinoa/noodles/rice.
 
Roasted chickpeas with garlic, served on top of brown rice with sauteed spinach on top. It's delicious and healthy and cheap.

Also, lentil soup.
