Character meals - how do they work?

We did not do character meals on our 1st family trip in Jan '10 and dh and I did not do character meals on the two previous trips we had taken together. We have 3 character meals booked for our upcoming fall trip - breakfast at Crystal Palace, lunch at Akershus and dinner at Chef Mickey's. I've read on several threads about how the buffets are crazy. Why? Our kids are young (6, 4, 2) so dh and I will need to assist our older two with getting their food as well as getting food for our youngest and ourselves. Is there a chance of missing characters while we are up? I guess I'd just like to know what to expect and why it's been called "crazy". Thanks!
 
You can tell when a character is heading your way. You should have enough time in between to get food.

We usually found also that they did a couple of laps during the time it would take us to eat one meal.
 
We had lunch @ Crystal Palace in 2009 - the kids were 8, 6 and 3 at the time. We had no problem getting everyone food (it took several trips to the buffet to get everyone fed!) and seeing all the characters.

We also had breakfast at Ohana - which is family style - and one character missed our table. We mentioned it to our server, and the character caem right back over to see us.
