Character Interactions...

For our little ones, we actually had better interactions with the "furry" characters than the face ones. It's really hard to converse with an awe-struck two year old LOL
Jake was AWESOME. He took a break while we were in line, when he came back, he came up behind my son and pinched his nose. Then when we got in line, he took my daughter's autograph book and hid it in his boot. Then he took my older son's baseball cap and turned it backwards. My 2-year-olds still talk about it. (And this interaction required maybe a 10 minute wait, no expensive character meal and no FP+)

Also, Mickey at Garden Grill helped my daughter overcome her fear (it was our first night there). He was very patient with her, but determined to get her to at least high 5 him. She was able to interact with all the characters the rest of the trip.
 
Our favorite interactions were on the train when we were Family of the Day in 2011. A squirrel started heading towards the train (while it was in station). Snow White turned to it and said something along the lines of "be careful, my woodland friend! The train is going to start moving". The squirrel turned around. :rotfl:

Tatiana and Naveen bickered the whole way. Apparently he's a bad cook.
Dale stood on his head. Mickey mimed yelling at him. Oh, and then Mickey wiggled his nose at us. Seriously. Wiggled his nose. :worship:

We saw Snow White later that morning and she recognized us from earlier. We saw Mickey during the ELP that night, and he recognized us, too. :eek:
 

Last summer when my little boy was three, we had our best interaction with Snow White in MK and even got to escort her down Main Street! He had never seen the movie and only vaguely knew who she and the Seven Dwarfs were, but we got in line anyways because he loves all characters. My guy is extremely friendly, and they spent a good five minutes chatting all about the Seven Dwarfs. Before posing for photos, Snow White gave him a big kiss on his forehead! After the photos, she asked him if he'd be her prince and walk her down Main Street! My little guy was thrilled and I'll never forget watching him walk hand in hand with her with bright red lips on his forehead! He loved waving to everyone they walked by! The photopass photographer followed them around and I got it all on video. We have the most precious photos and memories that will last a lifetime!
 
Mary Poppins without a doubt. We went to 1900 Park Fare for breakfast on my daughter's 7th birthday, which she requested as a huge Mary Poppins fan. My kids are all about meeting characters in costume, so they were dressed as Mary and Bert. An amazing character handler CM noticed us and told us something special was going to happen. After Mary came to visit us at our table, she took my kids by the hand and led them out of the restaurant and into the little garden to talk and take pictures in front of the topiary. She spent a ton of time with them and was so perfectly in character. DD was awestruck and was practically crying by the end of it.

Last year, my friend and I were meeting the Tremaines and they saw my lanyard. Anastasia got very excited and exclaimed 'oh look, her name is Jiminy. You come stand with me, Jiminy!' As one of the pins was a CM nametag style pin for Jiminy Cricket. We then all proceeded to discuss possible fantasy pins of a sliding Lucifer pin holding Jaq and Gus in his claws because of a Rafiki one I had on my lanyard too.
 
For your 3 yo son I think meeting any of the characters he loves will be amazing!

For adults though...GASTON HANDS DOWN IS THE BEST!!!!!!!!! Even just to sit near the front of the line & watch him interact with people is totally entertaining! Meeting him on my birthday which was a solo trip also was hilarious & I had the best time. Normally I just get a picture & move on, but he was great to talk to! Disney is totally nailing it when they cast this character.
 
Our favorite character from this trip was Gaston. He is hilarious! He wouldn't do a fist bump with my husband cause he didn't want to hurt him, that it would knock his hand through his elbow. When they posed for pictures he held up my dh's shirt so it looked like he had bigger muscles. My dd had a costumed made autograph book that had a picture of Gaston but in the background had a picture of Belle and the Beast. He scratched out the Beast and drew a heart around his face with Belle looking right at him. A teenage girl in front of us in line was wearing a Peter Pan shirt. He asked her why she was wearing that shirt and started insulting Peter Pan, saying how he ran around in tights picking on a disabled person. He had one little girl hold up her arms so she could hold up his muscles.
Woody and Jesse were our 2nd favorite. They are so cute and acted like children the whole time, just like a toy would act. We also ran in Mary Poppins in the train station. That was really cool!
 
On my first trip as an adult I went with my DH (then DBF) and two of our best (guy) friends. We were all members of our college's fencing team and were wearing jackets proclaiming our allegiance. We went to Cape May for breakfast and Goofy excitedly indicated to us (through motions and drawings) that he, too, was a "fan" of our alma mater. He then dragged Chip (or Dale?) over to show him our jackets and they both got all excited. Then there was some pretend fencing. Then we got a picture of all of us holding up my DH's jacket. Later that day, DH lost that jacket (and incidentally, his wallet in the pocket of it). So it's our last known photo of DH's fencing jacket.
 
I went to the MNSSHP a few years back with some friends and their two kids (ages 3 and 5 at the time). We were all in costume. My friend dressed as Snow White and I was the Evil Queen. We went to see several characters late in the evening, probably around 11:30ish and there were no lines. When we saw Genie and Abu, Abu pretended to take a bite of my fake apple and then pass out until Genie got the 5yo to give him a hug which brought him back. It was really cute.
 
Gaston IS pretty fantastic.....my best pic of us is basically him putting his hand almost over my face and smiling for the selfie :)

But Rapunzel was pretty great, she saw my Jacksonville Jaguars shirt and asked if I was on a team and if I would join her frying pan ball team....pretty cool haha

now only if we could get Flynn Ryder to smolder :)
 
Gaston, the Tremaines, Chip & Dale, Buzz Lightyear @ MK (he really liked the MB I made in his color scheme and my BL Mickey ears...I'm kind of a fan of his), Mulan, Ralph and Vanellope :sad1:, Frozone and Mr. Incredible and Jack Sparrow (at MNSSHP, my wife was starstruck but he and I had a nice chat about roguish aphorisms).
