I am sure this question has been posted in the past. I will ask, anyways. What has been your favorite character interaction? Why? It has been years since I have been. We are taking my 3 year old son soon. I am so excited!
 
When my daughter was almost 4, we ate dinner at 1900 Park Fare on our first night there. She was afraid of any and all characters (even Cinderella), but Anastasia spent about 10 minutes getting DD to warm up to her, first just kneeling on the floor and talking to her very quietly and eventually just having a little cuddle. We have met hundreds of characters since then, but I will never forget how sweet that Anastasia was!

There have been so many for so many reasons, but I think my favorite recently was my daughter with Mary Poppins. DD was so excited to meet her, and her mannerisms and comments were so perfect; it was an amazing experience. She told my DD that she just loved her hair, and talked about doing hers and making sure everything is perfect, "spit, spot." DD was trembling with excitement. At the same meal, the Mad Hatter was hysterical, exclaiming, "Ewwww! She's one of those huggers." My daughter cracked up.

Two favorites: Safari Mickey and Minnie at AK. A nice long interaction and so funny! My daughter was wearing Minnie ears and they played off that. I don't know how they do it seeing as they don't speak, but it was a funny interaction. We loved it. The other was Tinkerbell at MK with my teenage daughter. She was just so sweet to her, taking her hands and talking like best friends. It was really special and brought a tear to my eye.
 

My favorite interaction was at 1900 Park Fare as well, but at dinner with the step-sisters (this was about 6 years ago now, so maybe less recent than the last time you went).
One of the stepsisters asked me where I met my prince, so I went into the store about how we met watching for a tornado. She screamed, "IN A TORNADO" and the whole dining room stopped for a minute. She then informed me that she wasn't willing to try my way of meeting a prince.

Belle was super sweet with DS when he was 2 years old. She compared him to her "friend Chip" then gave him a lipstick kiss on the cheek.
Vidia (one of the Tinkerbell Fairies) stayed in character really well with him too, and kept asking why he wanted to give her a hug.

Our interaction with the "fuzzy" characters hasn't been as good, but Donald Duck grabbed DS during a photo op and wouldn't let go until after we finished the interaction.

When my daughter was two and believed that the Pooh at the Crystal Palace was the REAL Pooh. And when my son was five and Snow White left a red smooch on his forehead and he looked like he was in love.
 
I have two-

When DS was 7 we were at MGM(at the time that's what it was) and I heard footsteps behind us, it was Pinochio skipping up behind us on his way to this meeting spot, he took DS's hand and off they skipped together-I was just stunned. The character handler said just follow them, your son is first in line. It was so sweet.

Same trip at CRT breakfast, Snow White had a long conversation with DS about how he got from his kingdom to the Magic Kingdom, he told her he flew on an airplane. She stayed right in character the whole entire time it took him to explain what planes were.

Do they still do meets with the Fairies? My son likes those movies.
 
My opinion is that the best interactions are with the characters that speak of course. Snow White at Epcot has been really good the last two years we've seen her there. My daughter really likes meeting the characters and giving them hugs, but is a little bashful about having conversations. The first time we went Snow White spent a lot of time with her getting her to open up. It was a hot day with lots of people waiting and no sense of rush at all. Something funny was that Snow White gave the boy in front of us a kiss and his sister really got a kick out it...he left with red lipstick on his forehead.

Gaston, by far!

The first time I walked by him to get in line and the character attendant informed me that the line was closed but he'd be back later. As I was walking away he screamed, "I LOVE YOUR SHIRT!" in the middle of the M&G he was in. So fast forward about an hour later and I get back in line to meet him. I walk right up to him. First of all, it's important to know before you meet Gaston that he has VERY LITTLE regard for personal space. He got right up close to me at first and I got a little startled, as you'll see in the photos below. So the first thing I say is that I've been waiting to meet him for a very long time. He goes, "of course you have, who wouldn't be?". Then he goes, "I know I've said this before, but... I love your shirt. Very high fashion". We're about to take the photo and he goes, "you know, you're the fourth most beautiful person in this photo". "Don't you mean third?" I asked, not realizing that the Gaston in the mirror on my shirt counted as another one. So he goes, "ALRIGHT, SWEETIE, LET'S LEARN TO COUNT. WE'RE GOING TO COUNT UP ALL THE WAY TO 10 NOW, OKAY? ONE... TWO... THREE... FOUR... FIVE..." all the way up to 10 and then we took the photo. He's literally the best.

We took our daughter to Disneyland on the first day there we ate breakfast at Goofy's Kitchen. We met the BEST Cinderella & Mulan. We had just been to DTD and purchased a 5 Minute princess story book. They read a story to her. I wish I would of had them autograph the book as we didn't have an autograph book yet (poor planning on our part). Our daughter was acting so shy she was 2 almost 3 and they tried so hard probably for 15 - 20 minutes if not longer to get her to interact with them. I will never forget that experience.
 
I've had several amazing ones with characters on both coasts... Mostly with the princesses and an amazing one back when Beast still met in Epcot. There was one with Chip and Dale in DL where Chip was signing something to the handler and the handler was laughing and Dale didn't know what was going on. When he expressed frustration Chip signed it again. Dale - still lost - was told to figure it out himself. I honestly think they were talking about my b00bs but the interaction was still fun.

I can't find the picture of a chipmunk using my sisters braid like a rope and pulling with his foot against the side of the booth but it's happened more than once...

When DD was about 8 she and her grandmother ran up to Mary Poppins at the Carousel during EMH. I'm not sure who was more excited to see her, they both got to ride the Carousel with her, it was just the 3 of them and it was awesome.
 
Oh my. I posted earlier about my own kids but...In 1981 when I was five Pluto jumped into our booth and tackled/tickled my Dad who was a fairly big and serious guy. My sister and I rolled around laughing.
 
So many good ones, particularly with the talking characters, but my favorite was Anastasia commenting on our daughter's red hair during an M&G, then spotting her on the curb at the parade a few hours later. "Hey, it's the girl with my hair! Thanks for coming to my parade!"
