My DH and I love character interactions! DH practically plowed over a few toddlers to get to Mushu last trip! We travel with our teenaged kids who also still love characters. They each chose any meal for our upcoming trip and DS chose Chef Mickey's, DD chose CRT. I know that when DH and I do an adult-only trip, we will absolutely include at least one character meal, probably our first night, really gets us in the Disney spirit!
I think 1900 Park Fare is probably the most "adult oriented" of the venues, and maybe CRT, where I know many still go for a romantic dinner (or even a proposal). But of course, you should choose the one that appeals to you most, either for the food or the cast of characters.
