Character Dining at Disneyland Paris

I've got no idea where to start with DLPR for character dining. We are in the parks next February for 4 days & 3 nights. I'd consider booking 1 a day for the stay, maybe 1 breakfast, 1 lunch & 1 tea. What do you think? Any advise would be greatly received.

Its been many years, but when we went we did the Wild Bill Show/meal, kind of like Medeival Times, but with American cowboys instead of european knights (kind of funny if you think about it).
