For the past couple of days I've been looking over different restaurants and noticed that almost every seafood restaurant except for I think Fulton's dropped what ever form of crab legs from their menus yesterday. Or else I'm going crazy.

But anyways if this did actually happen when do the changes usually occur and when are items like those reinstated?

If you are looking at online menus at unofficial sites, there isn't any way to determine exactly when changes occurred or even if that particular menu is currently in effect in the restaurant on the day you read it. Unofficial sites (including this one) post menus when they are provided by guests who bring them back from WDW, so you can't assume the menu in place tonight or even a week ago is exactly the same as the menu you see online. They do sometimes post a date for the menus, but only a month and year, not a particular day. WDW menus can change quite often.

You may want to look at the menus on Disney's official site, www.disneyworld.com

But note that they are all marked "Menu items and prices are subject to change at any time without notice" so you can't even be certain with those.

Nor can you be certain about when or if a discontinued menu item will be reinstated. Crab legs are expensive, and Disney is trending away from offering the more expensive items or ingredients in many of their restaurants. (Fulton's is not a Disney restaurant, nor does it accept the dining plan, so it may not follow the same trend)
