Changing FP

We are going to be in WDW in October for a 7 day holiday. We have park passes for all days and want to hit Animal Kingdom and Epcot each one day and Magic Kingdom for four days. We are undecided which park we would like to do the last day. If we book FP for Magic Kingdom that last day will we be able to change them to a different park?
We have a child with some physical disabilities and so we have a much slower pace than many families and that is why we are taking so many days in Magic Kingdom. We are just not sure if one day in each of the other parks will be enough. We have been to WDW once 2 years ago and at that time we did not do AK and saw only half of Epcot. We didn't do World Showcase that trip.
