Changing A Private Affair menu

Hi! I have a question about the A Private Affair menu, for the Hilton Head dinner. We received a copy of it, and I know that Chef Gofton said that the choices were just suggestions, and he could personalize something. Has anyone been to the A Private Affair, and had a course that you absolutely loved, and wouldn't mind sharing with us? We are thinking about asking for some changes to the menu, so would love to hear any suggestions!

My wife and I enjoyed a great meal and wonderful conversation with Chef Gordon this past May. The setting at the beach house is great. It is true the menu is a sample suggestion. He'll make just about anything. We did have the seafood pasta which was great. We hadn't had banana's foster for a long while, so asked him to prepare that for dessert and he gladly did. Both my wife and I enjoy cooking as a hobby and shared some tips and experiences with Gordon. He's a terrific guy and the dinner is well worth it.
 
We had the crab cakes starter ( that were fantastic) , I left him a fair amount of room to manoever in the main course. All I said that I wanted some type of white fish, preferably Sea Bass and cooked with minimal amounts of sauces so the flavour of the fish came through. I left it up to him as to what was available and in his opinion the best of what was locally available/caught. It was a grouper of some type and excellent. Dessert was a chocolate cheesecake type thing.

It's really about what you like, Chef Gordon is an excellent cook and I'm sure if you give him a type of food you want with a type of style and leave it up to him to come up with an interesting variation. He's happy to discuss things with you, so if you're not sure what works with which courses he'll guide you through it.
 
Have the crabcakes, they are the best. Chef Gordon gave us the recipe when we were done with the meal, and I finally made them last weekend. They are so great. We also had the bananas foster and enjoyed them. For dinner, he did a "surf and turf". He did a filet of beef for each of us, and a fish that was really good. We also left it up to him with the fish -- he chose what he thought looked the best at the time.
