Celebrating a birthday at SW

We will be arriving in Orlando on my son's birthday and probably going to Sea World that evening. Is there anything special we should try to do that night? Is there somewhere fun we could eat? I thought I read somewhere that they have a new waterfront area with restaurants, etc. since last time I was there. Do they have a fireworks show or something at night? Just looking for something special!
