I know the food is and drink is included but to purchase alcohol boats, etc. do they take credit cards or cash only? How about Disney gift cards?

Neither - the only form of payment is to charge to your shipboard account. How your shipboard account is paid for (cash, credit card, Disney gift card) is a separate matter.

Also, if you have Disney gift cards you can either call DCL before your cruise and have the amount put on your onboard account. Otherwise you can have the gift card amount put on your account when you get on the ship. Just go to guest services for this.
