Some do, some don't. Most hourly CMs get "holiday pay", which is time-and-a-half. Some contracts don't include holiday pay, but have other bonus structures. Salaried CMs who work the day receive comp time, or additional time off at another time during the year. It varies by position and contract.
Then again ... there are people -- part time CMs mostly -- who PREFER holidays because of the atmosphere of the parks then. When I was an hourly CM, I used to volunteer for holidays. I got time-and-a-half for working them, but I'd have done so without the extra bump just because it was fun to be in the park on the holiday. (Of course, Christmas is a lot more fun than Labor Day, but still ... )
