We will only have carry on bags for this trip. Our flight leaves at 6pm and check out is at 11am, can we leave our bags with bell service and enjoy the day around the resort/park? The bags only need to be on the ME and we will pick them up at MCO. I am worried that they will try to check the bag instead of us doing carry on.

You can leave them with bell services but I do not believe they will load them on ME for you. You can return to the resort, pick the bags up and board ME (stowing them under the bus yourself). If they are tagged for ME they will go on the box truck that goes directly to the airport loading area and put on whatever flight you are booked on (in checked luggage).

I think you are confused about how the handling of baggage works.

Bell services has nothing to do with checking bags for an airline. This is a separate service called Resort Airline Check-in (RAC).

Bell services will also not get your luggage on Magical Express. That is all up to you. You can leave it with bell services and then you pick it up and take it with you on the bus.

Just leave them with bell services.

You would have to take them to the RAC desk if they were going to be checked. It can't happen accidentally.

Bell services is separate from the resort airline check-in counter that accepts bags to be transported directly to the airport. Before you go out to wait for the Magical Express pick-up, collect your checked carry-ons from bell services. If your bag is stowed under the bus in the cargo hold, you need to hand the driver your bag, as you board. When you arrive at the airport, the driver will hand you the carry-ons. A small tip to the driver is appropriate, for handling your bags, just as to bell services.
