Carrot-chickpea salad recipe?

I really enjoyed the carrot-chickpea salad with raisins in it from the Morocco pavilion at FotA. Does anyone know if there is a recipe for it in any of the Disney cookbooks?

Thanks Mjkacmom! I did google it, but all the recipes I found were substantially different from what I had at EPCOT, so I was hoping to find something a little closer.

I know there were chickpeas, carrots, raisins and golden raisins in it. There were no other fruits, vegetables, nuts, cheeses, or grains. As for the dressing and spices, I couldn't say--I wish I had thought about it a little more while I was eating it!

It sounds really good! It makes me mad at myself for being a weather-wimp and staying inside instead of spending the day at FotArts and trying that.

Ah, don't be mad at yourself--I was the opposite of a weather-wimp and went out without my coat on, and caught a cold! The good news is that I think the Morocco pavilion makes this every year!

Could it be currants instead of raisins? Your title reminded me of a recipe I downloaded months ago because it sounded tasty, but it's currants, not raisins -- I know, potato/potahto, but that could have skewed your search.

It sounds yummy, so I copied it, but haven't made it yet because my cooking muscles have given up the ghost or gone on the lam or something.

I saved that recipe too! It does sound delicious, and it may be the closest I can get if Disney hasn't published their recipe anywhere.

It's not in the 2018 Festivals cookbook, the earlier Taste of Epcot festivals cookbook (which predates Festival of the Arts), or the 50th anniversary edition of Delicious Disney. Sorry.

When searching, put WDW copycat with it.

Update: I made the recipe from post #11, and I think it's reasonably close to the EPCOT version (I left out the almonds, feta, and most of the ginger, and used golden raisins instead of regular raisins. Also, I used regular white vinegar, although it occurs to me mirin may have been a closer substitute.) As some of the recipes suggest, it's definitely better after marinating for a day!

If I were to make it again and try to get even closer to the EPCOT version, I think I would try replacing the honey with more oil and/or vinegar, and then add a shallot and 1/3 cup currants (from the recipe in post #6). But, as delicious as the spices in that recipe sound, I don't think they were in the EPCOT version. I remember the dressing tasting bright and citrusy, but without being sweet, sour, or spicy--just well-balanced.

Hope this helps anyone else who is craving carrot-chickpea salad!
