Carnivore diet

My son has been doing the carnivore diet which includes animal products like beef, pork, chicken, fish, and eggs, along with some dairy. He says he feels better and has lost about 25 pounds. Anyone have any ideas or recipes for sides to go with all the meats. I was thinling I could do a dip or sauce with cream chesse if I can find a way to make cracker from chesse.

You can take shredded parmesan cheese and pile circles in a non-stick pan on medium heat and they will melt into hard cheese crackers when removed from the heat. That can also be done in the oven. Just keep a close watch as these go from melty goodness to burned in a flash.
 
You can also cut deluxe American cheese (it must be deluxe, not the individuallly wrapped slices) into pieces, put them on parchment paper or a silicone mat, and microwave on high for 1 minute (in a 1200 watt microwave) to make crackers.

And yes, chaffles (cheese & egg waffles) make great bread/buns. There are a ton of new recipes using cottage cheese to make "breads" and pizza crusts and the like, too.
