I know I saw the answer, but now I can't seem to find it. so I'll just ask the question again, - thanks for your patience.

Lunch vouchers are considered good till what latest time for most restaurants.

Liberty tree tavern - how late can we schedule a voucher lunch there ?

That really depends upon the restaurant. There are some resort restaurants that close for an hour or two between lunch and dinner (Concourse Steakhouse) and others that are open continously, but have 4:00 as a breakoff point between seatings.

I would call (407) WDW-DINE to verify and make your Priority Seating. We use the Vacation Kingdom Lunch vouchers for early dinner as much as possible. This works great for theme park restaurants that have the really late lunch times.
