Canning vegetables

We grow our own sweet corn, there is not a lot out there do to the lack of rain. But today I did freeze 5 dozen worth of corn. I also froze carrots enough to get us though the winter (we don't eat a lot of them), I will throw them in for pot roast in the winter. The carrots would of gotten pitched but I saw on the new last night food prices will go up due to the lack of rain so I cut and froze them. The extra few vegetables I sauteed to eat over the next few days. What are you freezing? And is there anyway to cut up potatoes and freeze them? Not a lot, just a few, in case I want to throw together a roast. Thanks

I will can green beans. I will freeze sweet corn. I may even try to make raspberry jelly/jam:upsidedow
 

I freeze peppers all the time.....slice chopped...I even stuff them and then freeze them.
 
My inlaws just gave me a ton of tomatoes so I made up huge batches of spaghetti sauce and chili and froze that. I have chopped up and froze green peppers before. Never tried potatoes but I heard that it changes the taste so I haven't tried it. I know one time I accidentally froze a bag of refrigerated diced potatoes and thawed them and they tasted gross. I would love to make up batches of mashed potatoes and freeze them, though. My problem is I don't know how to organize the freezer and everything is kind of disorganized and I don't know what I have in there.
 
Green peppers are great frozen for cooking purposes. I normally well do as many quart sized bags as I can. Then I can "knock" off as much as i need for each meal without dealing with a huge bag.

Freezing does NOT work for Mashed Potatoes they are really gross when thawed. I work at a senior center and trust me they eat most anything and will NOT touch the potatoes on buffet day (is leftover day). You can can them then use for mashed by pretty much just heating them up like a canned veggie then mashing. I have done this in the past and really need to again, our basement just doesn't stay cool enough
 
My DB froze potatoes. He cut them up like fries (he has a thing you shove them through) and froze them. He said they cooked up fine for fries or they boiled them for making mashed.
 
Does anyone know if you can cut up and freeze green peppers?:confused3[

I was thinking the samething. Aldis has 3 pack of bellpeppers for .99..... Mushrooms for .69.

I just got finished (5 minutes ago) canning strawberry jam and stewed tomatoes. Trying to think of something to do with the mushrooms. Any ideas?

Since I don't care for mushrooms, I would have put them in with the tomatoes.
 
I freeze far more than I can... Green beans, peppers, onions, zucchini, summer squash, peas, corn on the cob, etc. And I freeze a TON of blueberries, usually 30lbs or so, to use over the course of the year. We have a separate upright freezer in the basement so I have plenty of room, and it is just so much easier than pressure-canning.

I will can fruit, jam, and tomato products. I'm trying pears for the first time this year because my 3yo just adores them, and I'll probably make raspberry jam if we get a good crop this year.

I'm not sure about potatoes. My house has a small cedar root cellar that we use for carrots, potatoes, and squash so I've never tried freezing or canning any of those.

Do you save a lot of money by canning green beans, instead of buying them in the can? My vet has me feeding my dogs green beans to help fill the up, and it is adding $10 a week to my grocery bill. Would I save money by canning my own?

Only if you already have the canning supplies. Otherwise, shop canned food sales and it shouldn't cost as much.
 
I freeze mashed potaotes all the time and they come out great
I prepare as usual with milk and a little butter
Mash and freeze
I microwave to thaw and they are a little watery at first, let them set for a few minutes to absorb the liquid and they are fine
Being a small family, this is the only way to make a batch without waste

I second freezing mashed potatoes! I do it all the time as prep before holidays or make a huge batch for dinners. They come out perfect just microwave and keep stirring to re-absorb the water. At least try it and see if you like them. We do!!
 
We just tested the pork we pressure canned a few months back. It broke up into perfect pieces when we reheated it then added some KC Masterpiece. In a few minutes, we had amazing pulled pork sandwiches!

I figure pork may get expensive, so I'm going to can more while the price is still under $2/lb.
 
DH travels alot for work so I've been tagging along on some road trips. We just put up Indiana sweet corn, Georgia peaches and plums and did sour cherry sauce. Next trip I'm hoping for blueberries and blackberries.

I have the Ball Blue Book which is great for reference. Covers canning and freezing and dehydrating just about everything and has some pretty good recipes as well.
 
Dont forget about Pintrest.... If you can name it, Pintrest will have a way to can it. Simple recipes. :thumbsup2
 
've only had success at freezing berries for making jam, but I then I probably told myself I'd come back the food and repackage it but never did...It's great to hear that others have been frezing bell pepers successfully. This is something that I've been wndering about as our bells have been good producers this year.
