Canning/Jam/Salsa Recipe!

Hi All-

Well I've been canning like crazy lately! Last week I made garlic dill pickles. Today I've done 10 jars of Apricot-Fig Jam, 5 jars of Strawberry-Fig Jam and 5 jars of Raspberry-Fig Jam (yes, I have access to a very abundant fig tree :D ) Tonight I'm canning apple pie filling and tomorrow is apple butter! ( we like to give these as gifts at Christmas time, with homemade bread) I found a salsa recipe for the Dis poster looking for it. I haven't tried it yet, but here it is:

Homemade Picante Sauce

1 gallon tomatoes
1 large onion, chopped
6 jalapeno or chili peppers, chopped
2-3 sweet bell peppers, chopped
2-3 tablespoons chili powder
2-3 tablespoons curry powder
1 tablespoon ground peppercorns
1 cup vinegar
1 teaspoon ginger
1 tablespoon dry mustard
1 teaspoon salt
1/2 cup sugar (optional)

Combine all ingredients together in a large pot. Bring to a boil; reduce heat and simmer until fairly thick, stirring often to keep from sticking. Pour into sterilized pint jars and seal. Precess in hot water bath for 10 minutes. Makes 5 pints.
 
Thats awsome-I just wish I wasnt so afraid of messing up the sterilization...that would make some great gifts!
How do you sterilize jars?
and for dill pickles-do you have to sterilize jars....I have a great recipe for those I would really like to try-thanks for the guidance!
 
The recipe I used for the dill pickles was one for canning (you sterilize the jars and process them...) but I have seen several recipes for refrigerator and freezer pickles if you don't want to mess with the jars. Knock wood, I haven't had a problem yet (I've been doing this for about 6 years) you have to follow the directions carefully--process for the correct amount of time and make sure the jars, rings and lids are sterilized and you wipe off the tops of the jars really well before you place the lids on. Then you have to make sure one you process and the jars cool your lids are sealed (the "button" doesn't press up and down) You might want to visit this site:
