Candlelight Processional Dinner Package

I've heard that Candlelight Processional Dinner Packages can be booked starting July 3. A couple of questions:

1) What time (Orlando time) can you call on that day?
2) Chicken/egg question: does your dinner time determine what show you see? What are tips/tricks to ensure we get the 5pm show . . . or the 6:45 show . . . or the 8:15 show?
