if I have to cancel, and I have only paid the deposit, do I lose the deposit money? Is it ever refundable up until a certain point?

As noted, unless it's a deposit for a Concierge room, it's refundable. Up to a point. It varies, dependent on embarkation port/length of cruise when that date is:
Basically for 1-4 night cruise it's 75 days out.
5-9 nights = 89 days out
10 nights or more OR cruises where embarkation port is non US port - 119 days out

On a related note, if deposit was made and then the cruise was paid in full can the date of your cruise be changed (made later)? We have a Christmas cruise booked for this year and payment in full is due in September. There is a chance we won’t be able to go, but won’t know for sure until November. Can I pay in September and, if needed, change the cruise in November to some time in 2019?

DU has charts of the cancel policy and forfeits. The rough summary is that inside 75 days for most cruises, you will lose a healthy chunk of the payment: https://www.dreamsunlimitedtravel.com/cruise/cruiseterms.htm

This is an instance where what you really need is insurance, rather than the Disney cancel policy.

I'm not sure if you can. But I will suggest, if you try to do this, be sure to use that wording "I want to change our cruise date" Do not ever mention "cancel" the cruise and move the money to a new cruise.

I believe you lose a certain percentage of what you have paid depending on how far out you are from the trip.

This is a place for trip insurance or to simply choose a new time prior to the cutoff date if you are unsure.

After the PIF date, I believe you are bound by the cancellation rules whether it is to completely cancel or move dates. Both might be treTed the same as a cancellation. If you aren’t sure, I would cancel before your PIF date unless you have insurance that could cover the reason you might need to change.

Thanks everyone! I have insurance but the issue wouldn’t be covered by insurance. My cat is slowly dying. He has good days and bad days, but really got worse when I was gone over Christmas. So if he’s still with me at my PIF date, I’ll have to reschedule. I don’t want to be gone and lose him. My sister lost her dog while she was gone on vacation last year and it was brutal.
