My DS12 is having International Day at school. He must make and bring in a food from Canada. I was wondering if anyone would have a simple recipe that he could make - or should I say that I could make.;) He would like to bring in an easy dessert that isn't messy. Any suggestions would be greatly appreciated.
 
I think butter tarts are a Canadian dessert...
AMAZING BUTTER TARTS

INGREDIENTS:

Pastry for 24 three-inch tart shells or frozen tart shells
1/2 cup raisins
1/4 cup soft butter
1/2 cup firmly packed brown sugar
2 eggs separated
1 cup corn syrup
1 teaspoon vanilla
Pinch of salt
1/8 cup finely chopped nuts (optional)

METHOD:

Line tart pans with pastry. Plump raisins in hot water and drain well. Sprinkle raisins in bottom of each tart shell. If using nuts, sprinkle a few nuts into empty tart shells. If you like neither, leave tart shells empty.

In medium bowl, cream butter and sugar. Beat in egg yolks, corn syrup, vanilla and salt until smooth.

In separate bowl, beat egg whites until stiff and fold into butter mixture.

Carefully, using a spoon if necessary, pour filling into tart shells until three-quarters full. Bake in preheated 375F oven until golden, about 15 minutes. Filling will puff up during baking and settle when cooled.

Makes 24 tarts.
 
There are few desserts more quintessentially Canadian than the beaver tail. (And we all know how good they are from our trips to the Canadian pavilion at Epcot :teeth: ). You can find a beaver tail recipe here. May be kinda messy to make, but easy to transport.

Here's a great Canadian recipe straight from Nanaimo British Columbia:

Nanaimo Bars


Base
2 squares (oz.) semi-sweet chocolate
2 cups graham cracker crumbs
1 cup cocnut
1/2 cup softened butter
1/2 cupt chopped walnuts
2 tablespoons sugar
1 teaspoon vanilla
1 egg
Filling
1/4 cup butter, softened
3 tablespoons milk
2 tablespoons instant vanilla pudding
2 cups confectioners (powdered) sugar
Glaze
4 squares (oz.) semi-sweet chocolate
1 tablespoon butter
Procedure:
Base
Combine ingredients. Press into 9 inch square cake pan. Chill.

Filling
Combine butter, milk, and custard powder. Blend in confectioner's sugar. Spread over base. Chill at least 15 minutes.
Glaze
Partially melt chocolate and butter. Remove from heat and sitr until melted. Spread over custard layer. Chill.
Store in refrigerator, covered, up to 1 month. Makes 24 bars.

Serve chilled. They're rich, so small portions may be appropriate


They are really easy to make and sooooooo good! I'm sure the whole class would love to sample these!;)
 

How about nanimo bars? Don't have a recipe handy for you but they would be easy to take in.
 
Easy Maple Cookies!

1 c. flour
half cup of icing sugar
half cup of butter
half cup of corn starch
2 tbsp. maple syrup

Mix all. Make into one inch balls. Bake on ungreased cookie sheet for 10-15 minutes at 325ºC. ENJOY! S
