Canadian Cheddar Cheese Soup

Oh my, I just made this from scratch from the allears recipe and it is wonderful. I had it for the first time last week at the food and wine festival. Just wanted to share how good it came out and it was super easy to make! Now I am going to the gym to work off what I just ate

I would recommend the cream cheese mash potatoes as well. Tried them last trip and they were very good.

We had it for dinner tonight! It is DS(11)'s favourite soup and we love it. Not too hard to make but oh so satisfying. I often make a double batch so we can have a small bowl with dinner during the week or another entire dinner of soup and a salad.

Can the soup be made without adding the beer or does that throw off the balance?

Never tried it without beer, but I will tell you Moosehead is the best for it! If in a pinch any Canadian beer will work though, but too dark a beer..

Oh yes! I've made these at home too and they are sooo yummy! I actually save the leftovers and snack on them until they are gone.

I'm so going to make the cheddar cheese soup! I had it when we were there 11/1, but I was recovering from H1N1 and had NO tastebuds. What a bummer! Glad to know I can make it here at home and enjoy it again now that I can taste!
