My mother in law is recovering from lung surgery and will be going home from the hospital in a couple of days and I'd like to put together some meals for she and my father in law since she will not be able to cook for a while. I thought they might like a chicken pot pie and if I could make it and freeze it then they could just thaw and reheated it when they wanted to.

It should work, you can buy frozen chicken pies in the supermarkets over here in the UK, so I guess you can in the US. I think pie crust freezes OK.

It will freeze OK, but for safety if you are using frozen chicken make sure you cook the filling first, allow it to cool before topping and freezing. With fresh chicken you don't need to cook the filling before freezing. It would probably be best cooked from frozen too.

If I make fish pie with frozen fish I always defrost and cook it before using. :wave2:

My chicken pot pie recipe makes 2 at a time and I always freeze one. It works perfectly. Sometimes I put it in the fridg to thaw the day before, but usually I just put some foil around the edge of the crust (to keep it from burning) and put it in the oven frozen. Everything in my filling is fully-cooked before it goes into the pie shell.

disneycowgirl,

would you mind posting your recipe? sounds like a great make ahead meal!

I make many individual-sized chicken and vegetarian pot pies at a time and freeze them. I just pop them into the oven, still frozen, and bake for about 40 minutes. They last us all winter and I only have to cook once! :sunny:

oooh! yes please, I love american chicken pot pie. I used to order it in Friendlys when over there on my holidays but they stopped it a few years ago (no demand for it!)

It does not seem to be a popular meal in the UK.

thanks

I love trying new recipes :Pinkbounc

I'm never going to get off these boards :guilty:

I have a question. Do you freeze the pot pie before you have baked it. In other words, before the crust and top are browned? Otherwise, wouldn't the crust get a little soggy?

I only use a top crust for mine and I don't bake it before freezing. It doesn't get soggy if you cook the pie at 425 degrees.

Hey disneycowgirl, where's the recipe? :Pinkbounc

:cold: Its freezing here today and making a pie would be the best way to warm up AND have something yummy for dinner!

I pm'd disneycowgirl for the recipe!! Sorry to be a nudge, but it sounds yummy, and I would loooove to know how to make a few for the freezer!
