Can you comment on my itinerary

Can you experts out there answer some of my questions/comment on my itinerary? Thanks!
We are getting in Wednesday night and staying at MainStay Suites in Orlando. I'm not really sure what is around there.
Next morning we will transfer over to Saratoga Springs Resort (any advice on the best way to do this)? I am assuming our room at SSR will not be ready, so they will hold our luggage, right?
That day we are just going to tour the different hotels and look at Christmas decorations. Maybe play some mini-golf. Head over to Boardwalk at 6pm for ps at Spoodles.
New Year’s Eve- head to Epcot (how early should we get there?) PS at 6:10 at Le Cellier
New Year’s Day- sleep in and then head over to Downtown Disney, and check out DisneyQuest.
Sunday go home.

in early november when we checked into ssr around 11am-ish, our room was ready...surprisingly...of course they'll hold your luggage...

How early are you going to head over to SSR? It's too bad you couldn't plan a character breakfast that morning.

We will probably get to SSR around 10:30. I hadn't even thought of a character breakfast. Maybe I should try to get over earlier.
