I love the Blue Bayou, but it is essential to get a PS reservation there. For the other places, you can walk up and get a table right away most of the times. During busier times of the year, you may need to make PS for these places.
Blue Bayou has good food (not great IMO) but the atmosphere is really what you're paying for. It really can't be beat. In DCA, the Wine Country Trattoria is okay, but I would suggest going to Downtown Disney instead that night. There are a host of restaurants there that are better. And the advantage DLR has is that everything is really close to one another. Walk out of DCA and you're in Downtown Disney. I like Naples or Catal in Downtown Disney, and a lot of people love Ralph Brennan's Jazz Kitchen.
My absolute favorite restaurant in all of DLR is definitely the Napa Rose. I go there every trip and love it - and it's my favorite Disney Dining experience I've had including my meals at WDW. Yes, the price point is very high, but I think the food is so delicious and well worth it (I just end up eating snacks and food I saved from the hotel breakfast buffet usually to save during the rest of the trip). I always have great service there too.
