I think the best option was after the first adult rides and you do the swap, they head to BoG and get your table and tell them that the others are coming. During that time the swap riders do 7DMT.
This seems to make the most sense and most likely to work.

It used to be, but now it's digital with a specific return window.

From my experience in August, they were anytime fp. At least from what I could tell in MDE. There were a few times we did rider swap, but my wife rode during her normal fp time. All day long we had a multiple experience fp for that ride. The multiple experience fp was only for her though, and not my oldesr son who was doing rides with her the second time. So he was using his rider swap multiple experience.

Now, we never tried using the extra for, so I'm not sure what would have happened if we did lol.

Tonight I was able to move our SDMT Fastpass up from 2:00 to 12:10 (Nov trip). Trouble is we have a 12:30 lunch at BOG. We need to do rider swap for this ride because our 2 y/o cannot ride it. First my husband will go with our 6 y/o and then i will go with our 4 y/o. I'm going to keep trying to move up our SDMT FP (even the day of since our other FPs are 9-10 and 10-11) but if I can't, will we be able to make it to our 12:30 lunch? They look close on the map but I've never been so not sure of the logistics of navigating the park with a double stroller and how long the wait is with FP+ and rider swap, etc.

This is what I would do. Have DH and first group tap in at 1205 for fastpass Once they ride swap and have DH and 2 year old go check in to BOG, 2nd group ride and move it to lunch. This should work fine provided no technical issues with ride.

ETA: If BoG asks DH if everyone is there, I'd just have him say yes (you guys could be in the bathroom or something.) Once he checks in, he'll have to go pay, get a table (it's open seating) and then you guys will still be waiting for your food to get delivered. That's plenty of time for you to ride and get over to BoG.

No it's 5 before and 15 mins after, so 20 mins total of you're looking at it like that. We just did this last week and literally made one of our fastpasses with about 30 seconds to spare on the 15 min grace period. it's def. 15 mins after.

This is exactly what I going to suggest. First of all, when you get to BoG you're almost certainly going to encounter a 5-10 minute wait. After first group gets off, just head on over. Once you're checked in, you can hold off sitting for a few minutes until the rest join you. If you tap into 7D 5 minutes early, and as long as the ride is operating without delays, I actually think the 2nd group will likely be off and at BoG not more than about 5 minutes late.

So unless 7D has something go wrong - you'll be fine.
