I need to make some muffins for sunday night but the only time I have to make them is tomorrow morning. Can I freeze them and de-frost them again on Sunday? Will they taste strange?

I have froze muffins before because I am the only one that eats them and I do not eat that many at one time and I do not like to waste them so I started to freeze the ones I did not eat.

What I do is:

remove the ones I will freeze from the oven 2-3 minutes before they are done. I let them cool and then I place them in a ziploc bag and then into the freezer. When I plan to heat them up I remove what I want and place them in the microwave on defrost for 30sec. - 1 min.

HTH

Nothing is as good as fresh but they are not bad.

Thanks. I´ll see what I can do. Maybe there is a slight chance I can make them early sunday morning. :)

I do this all the time for my kids. (That is the only thing my son will eat in his lunchbox.) The other thing you can do is make the batter, pour them into the baking cups and freeze. On Sunday you can put them in the oven frozen and they can cook while you are showering/getting ready etc. Just add a couple minutes to the cooking time.

What a great idea. I would never have thought of that.

Yes, we freeze muffins all the time - no problems! Just thaw properly. :goodvibes

Try it, you will love it! Once a month or so I will make up several batches & freeze them in the muffin tins. Then when the kids want muffins I can grab out 2, 4, 10 whatever and cook them while I shower. The kids think they are loved because I made fresh muffins and I didn't even have to get up early!

we freeze the big muffins from sam's club....and when we defrost them they are very fresh tasting still.
