Can I add DDP?

DH and I are taking the DGKs to WDW for their Spring Break in March. We booked (with points) 5-nights at AKV-K, our home resort. I have an AP; I bought DH, DGS, and DGD 5-day tickets from UT and have linked them via MDE.

We have since added on a night at YC at the beginning, booked cash room-only using one of the Spring discounts (can't remember if it was a passholder or public discount). I'd like to be able to add the DDP just for this night.

But having not bought my tickets directly from WDW, will I be able to? From some combination of DVC/Passholder/ticketed guests?

You'll have to call. They'll book it as a "ticketless package" and all package rules will apply to the reservation.

Follow-up question. What is the latest I can convert it to a ticketless package and still add the DDP? I want to keep it a cancellable-without-penalty room reservation as long as possible; if the weather is not pool-friendly, we won't want to pay the premium to stay at YC and will move to POR. I believe I can cancel the room-only without penalty up until 5 days before check-in. Can I do the conversion and add the DDP at 6 days before checkin?

The pp is correct that the DDP can be added as long as it's done at least 72 hours (3 days) prior to arrival. With that said, if you decide to keep the YC but the room type you have booked is no longer available under the discount, you will need to speak with someone in guest services in order to not lose the discount. Since the RO will have to be cancelled/refunded and a ticketless package booked, CRO doesn't usually have the ability to make that change without losing the room. RO and packages are different reservation systems, so money paid toward one cannot be applied to the other, which is why one must be cancelled/refunded and a new reservation booked.
