Camping food?

Bacon, eggs and hash browns are always something we bring camping and taste so much better out in the wilderness! :rotfl:
 
When my DH and boys go on cubscout overnights, I make up aluminum foil meal packets ahead of time. They really enjoy them and since they are ready to go on the fire, they are really convenient. Here is a recipe similar to what I do, there are a few more linked on the same page.

We made chuckwagon pies, too. But we called them Hobo Pies. You need a couple of special irons, soft bread, and fillings like pizza sauce, cheese, pepperoni, what ever you want. You can also use pie fillings-apple, cherry, etc. You need butter for the outside of the bread, and the irons go right on the fire. These are easy to assemble at the campsite, the kids love to make their own and they are absolutely delicious!

What a coincidence, I just found one of these pie irons at Goodwill yesterday-brand new for 99 cents.
 
When we go camping I always make a big beef stew the night before and then just reheat over our camp stove. I usually bring a couple loaves of italian or french bread to go with it but you could bring a bag of rolls too.
 

Back in my backpacking days (way back) two "must have's" were Dinty Moore Stew and Spam.

For campground camping, anything that's easy to keep and prepare works.
 
Last time I cooked over a fire we made foil packets. We had marinated chicken breasts, tofu and lots of veggies, and let everyone put whatever they liked in their foil packet. We double-wrapped the packets, labeled them with everyone's names and put them on a grate over the fire. We turned them a couple of times while they cooked for about 15 minutes. They were very yummy!

These sound great--and FUN.

I like to do speghetti when we are camping. For a large group that might be a good idea. I make the sauce ahead of time and freeze it. Then all I have to do is thaw (it will likely start to thaw in the ice chest) the sauce and heat it heat, cook the noodles (Just bring a couple of big pots) and serve. I usually bring salad in a bag and garlic bread to go with. The garlic bread can be heated in foil in over the camp fire.

I suggested this to start but DH didn't think it was a good idea :confused3. This is still a possibility.

To make foil pouch dinners even easier, we use the pre-grated hash brown potatoes from the refrigerator section of the grocery store and a bag of frozen mixed vegetables -- no chopping required.
Great idea!! I wonder if frozen french fries might work too??

we call them banana boats and they are yummy....we wrap them in foil and put them near the fire.

We made these last year and I LOVE them. I forgot about them-thanks for the reminder!!

When we go camping and I have to feed a big crowd (we sometimes camp with parents and friends, too, so I've fed as many as 11), I like to make Chicken Rotini Toss. Basically it's cut up chicken sauted in minced garlic, garlic powder, diced sun dried tomatoes, salt and pepper, and olive oil, with cooked rotini and extra olive oil added. There's a recipe on www.allrecipes.com if you're interested. It's always a hit.

Great ideas--still open for more! Oh, and we will most likely be cooking over a campfire as the only "equipment" we have is a tent and a cooler :lmao:. We don't really "camp" other then this one weekend.
 
Similar to the cheesy potatoes, we do it a little different. We also cut the potatoes about 80% but we put slices of onion in each cut. As the potato bakes in the foil the flavor of the onion goes all through and it's awesome! Another potato one we do is make packets out of : sliced potato, onion, bagged baby carrots and whole green beans with a just a bit of butter, salt and pepper. Everyone makes their own depending on who likes which veggie more and then everyone is happy! As for meat, we cheat. We like to buy the pre-marinated and bagged : chicken teriyaki, red pork, steak tips. You buy them sealed, they don't leak in the cooler and you just cut them open and throw on the fire!
