ok, if I have figured out how many calories I am s'posed to be eating every day, and one day I have a crazy hectic day and at the end of the day I am way low, do I just eat sensible, or do I load up to hit my calorie intake? I know if I eat too few, I wont lose, so I wasnt sure if I should up what I eat to hit my number, or chalk it up to a bad day and just eat right, and get back on count the next day?

I would definatly NOT eat just to make your calorie count by the end of the day. Even if you have hectic days, you shouldn't just consume anything to make the calories at the end of the day. its true, you don't want to be depriving yourself and run on no fuel, but at the same time, if its the end of the day, your not hungry, and you eat just to make your calorie count, its just wasted calories consumed. And chances are, its probably not "good" calories if its at the end of the day. So, just take one day at a time. Brings portable snacks with you so you can TRY to make right decisions. remember to, that what you consume at the end of the day is most likely to not be easily digested as your body won't burn as much during sleep. So just take it one day at a time, and do the best you can, just don't fill up on empty calories if you don't have to...try to aim it at 1500 a day (ALL dependant on your fitness level and weight of course) but if you can't make it that high, then so be it, try the next day...;)
