Hello, I was wondering if you’re able to eat at the bar and just have a cocktail and some sushi appetizers? Not wanting the fixe prix menu!

Not sure about apps but certain the lounge is still open for drinks without a reservation.
Keep in mind it’s still first come, first allowed upstairs. Limited seating so try and get there 45 minutes to an hour before they open.

I do it all the time, there's a separate bar menu (or you can order the regular three course menu if inclined), or just have a beverage. Have fun!

Disney must not want people to know this...they have zero information on their website. Haven't been able to find a bar menu reported by anyone online later than 2022.

So my point is...if you sit at the bar and they give you an apps menu, take a photo for us

Yes it is. You can order individual dishes or the whole dinner at the bar. No reservation needed, but it can fill up.
