Can you just go and sit at the bar and get a drink at any time? And pushing it further, can get a sushi plate while just sitting at the bar having a drink? Thanks, Peanut

Yes and Yes. We have actually had an entire meal at the bar.

You do have to be escorted up to the bar, and they won't let you go up if it's already full.
