buying disney tickets with package

We are headed to Disney in October. With our package we bought 8 days expiry myw tickets. (non hopper) If I want to take one day off and not go to the parks can I visit 2 parks on another day and use 2 days on my ticket?
One day I want to go to Animal Kingdom and then to Epcot for dinner so can I just use 2 one park tickets on the same card/same day? Hope that makes sense. Thanks

Sorry, with base tickets it is strictly one park per day (even if you are willing to "give up another day"). If you try to enter a second park, it will not release the gate and the CM will see a message, non-hopping ticket.
